How to eat yellow Tail
Well I got one now what do I do with it? Dan gave me a recipe for Cevchie but other then that I don't want to screw it up with batter so come on guys help me out.
and if your out Tuna fishing and you fly by a clump of grass and or a log floating stop and throw swim bait or jig. We did twice lost one got one. Did you ever think I would post a how to

Grill it, skin on or off, black pepper and a little lemon butter.
Or just slice it up and eat it raw. Seiously, like tuna, less is more. Don't marinate it or deep fry it.

Cook it just like you would any other fish. It's great brouled in Olive Oil and garlic, battered like fish and chips, smoked, Sushi, or pan fried. Because it's a Jack and not a tuna, you can do a lot more with it than Albacore or Yellowfin tuna.

Well, maybe if you'd have entered the pelagic pool, you'd have the money to go out and buy yourself a cookbook. Some guys just never learn.
If it was me, I'd overcook it, smother it with tartar sauce to cover up the "fishy" taste, and then order a pizza.

Do not cook it - Yellow tail my favorite. If you know how to make a California roll, a little sliver of jalapino and some cilantro inside - yum! Best with some Yellowfin and Salmon - its called an amigo roll.
Or Corrirod's Cevchie from the last sushi party
dab of rice, some wassabi, chunk of fish dip in soy - heck you made me hungry and I'm done for the day.

Please listen to him...don't cook that fish!
It's simple to slice into small thin strips and eat...the guy at the joint we buy sushi from said two days old is better than fresh...it's a little too firm for his taste...so...you're in luck!

Try this Brook, go to your local sushi spot. Sit at the bar and ask the sushi chef to show you some examples with Hamachi - eat and enjoy than go home and gorge

Make sure you take the time to cut the collar (around the head) out and grill it. Pour some shoyu on it while grilling. It's better eating than the rest of the fish. Meat is very different.

The best way is raw. Eat is a shashimi.
Also, don't forget about the hamachi cama (yellowtail collar). The restaurants can charge around 15 bucks for one collar. Just put some sea salt on it, grill on broil for about 10 minutes, and dip in ponzu sauce (optional, put some ground daikon raddish in the ponza sauce). Awesome!

Fresh Ground pepper and then seared. About 3/16ths inch of penetration on each side of a inch and a half steak. It's like the best filet mignon I've ever had.
Slice thin and eat right there.

Thats the kind of fish you eat on the boat, with wasabi from your tackle box WHILE it's still lookin at you!! Ye HAW!
or if you MUST, fillet, dip in a hawian BBQ sauce and throw into a HOT cast iron skillet (with scortching hot sesame oil) for about 1 1/2 min per side. Just long enough to tan the outside of the meat and blacken the points in contact with the pan. it will still be pink inside. serve with some of that pink thin sliced ginger.

Raw is best, but if you must cook it:
Macadamia Crusted Yellowtail with pineapple salsa
SALSA
1 red pepper
1 green pepper
1 jalapeno pepper
1 red onion
1/4 fresh pineapple
1/4 inch dice of the above, set aside
1/4 cup diced cilantro
1/4 tsp sea salt
1 tblsp sugar
1/2 tsp cumin
1 lime - JUICE OF
mix the above with the diced pepper mixture and let set for 24 hours
YELLOWTAIL or any other exotic
Pre-grind macadamia nuts in processor (about one cup for each lb of filets)
dredge the filets in flour
dip in egg wash (2 parts egg one part milk)
dredge filets in nuts, make sure they are covered
Heat oil in skillet and saute filets over med heat until golden brown on each side. DO NOT TRY TO COOK THE FISH COMPLETELY IN THE SKILLET AS THE NTS WILL BURN. Just brown them and transfer to oven at about 325 to finish the cooking process. Serve with your favoite side dish and tortilla's, top with Pineapple salsa.

If you are into Yellowtail (hamachi) sashimi, pls note the stuff you get in the sushi bar is farm raised and has alot more fat content then does the fish in the open ocean, hence the taste is alot richer. Just don't want one to be dissapointed if it doesn't taste exactly like in the sushi bar.

Clean , fillet, skin
Trim any fat off
let sit for a day or three, let it age a little, it's a good thing
slice 1/4 in slices, serve with some rice or just plain.
Some soy and ginger, some wasabi also
HIMACHIE BABY
or you can cook it, just take some backstrap and boil it for 3 hours
if you do cook it, fast and hot and cook it rare

Bottle of Highland Mark, Sharp knife, Green mustard, a little virgin olive oil and a napkin.
We should have that fish gone in about 3 minites and that will solve the fish problem.
