Default Tuna price

A friend of my bum-in-law has tuna that he'll let me have for $2 per # don't know if its whole or not what should the price be?

Well, unless he has a commercial license to sell Tuna, I don't think I'd talk about it here, and ask for price advice.

Can usually get it right off the commercial boats in the basin for $2.00/lb whole. Might give you a little price break if you buy a bunch.

Does anyone know the ratio of useable loins to whole fish?

Someone asked me the other day and after thinking about it I said I thought it would be at least half waste, guts, gills, carcass.

Sound right?

I brought home 6 averaging 19lbs each and 1 peanut about 14lbs...after carefully taking my time, I took the carked loins and weighed them on the bathroom scale.

Before carking: 128lbs

After carking and trimming: 55lbs

so just slightly under 50%

We usually seem to get about 40-45% take home weight from Albies.
