It is great grilled, then cut into pieces to put into a taco shell along with some coleslaw.
Or put it in a taco with shredded lettuce, chopped scallion, tomato, and a mixture of plain yogurt (or sour cream) & a little canned chipolte pepper (or salsa of your choice if you don't like it spicy).
Mahi mahi (or any fish) is also good rubbed with a little olive oil & cajun seasoning, then grilled.

My favorite way to eat Mahi Mahi is with a mango salsa. I marinate the fish in oil, white wine vinegar, red pepper flakes and a little ginger for about a half hour, then I grill it. For the salsa, I dice mangos, chop red onions, jalapenos, cucumbers, avacados and mix with lime juice and cilantro. I don't measure ingrediants much anymore but you can find recipes on line. We just had it with some of the mahi mahi that was on sale, earlier this week and it was great! We had a lot of salsa left over which was also really good with tortilla chips.
