Sorry folks, but after the last baked steelhead post I had to drool and give this one out.
Learned this one a few years ago on the John Day. This is the way the farmers taught me on the East side cook their steelhead.
Fillet your fish, pull pin bones. Leave skin on and season meat side with Johnnys seasoning and lemon pepper.
Heat skillet with EXV olive oil until HOT!
place skin side up and cook until you see fish transparent (cooked) halfway through.
Cover pan with lid and turn heat off,wait 10 min.
Peel skin off with butter knife.Flip over just enough to brown,(2-3 min)
Serve with Litehouse jalapeno ranch dresing.
Absolutly WOW! People that don't like fish have liked this one.Try it.
