Default Salmon/Steelhead Sauce Recipe

Here is a recipe that my father and I have used for a long time.

You take white wine, lemon juice, butter, a white onion (med sized to big), and fresh garlic (chopped). mix the wine around 2/3 of a cup, add lemon juice until they aren't overpowering each other.Half a cube of butter.put in a good sized sauce pan....heat till butter is melted.... while heating peel and chop onion into small pieces and cpeel and crush mmmm about half of a full clove of garlic ( around 6 to 8 individual pieces...add salt and pepper to sauce to preferred taste...add onion and garlic...let simmer until onions are clear.....while cooking sauce...you may want to add more wine butter or lemon juice....its all about how you think it tastes....when onions are clear the sauce is ready to go on your fish....great for baking or the bbq. I personally like bbq because of the smoke flavor that it creates. Give it a shot and tell us what you think. Works great for baking Halibut too. Enjoy and good cooking....

Thanks for sharing. One of these days we need to get an ifish cookbook going. Lots of tasty sounding recipes lately. Now all I need to do is figure out how to catch a fish [img]graemlins/eek13.gif[/img]

What you are making is a very classic poaching mixture. Once the onions are clear, you can put your fish fillets in the pan to cook. Works great if you use a covered pan. Serve the fish on a bed of rice and drizzle the sauce over the fish for a nice presentation.

SalmonNilla, Great idea... An Ifish cookbook, Fish recipes and more...They could be submitted...tested...printed...and i bet someone on here has printing connections They could be sold/used as a fundraiser for the Christmas function.??? Just a thought.
