Default In search of Smoked Salmon

I am in the hunt for smoked salmon. A friend of mine is looking for some to hand out as presents for his family.
I have no idea where to look for a good quality smoked salmon.
Any help that the ifishers can give here would be greatly appreciated.

He wants to show those easterners that Pacific salmon is better than Atlantic.

Smoked fish can cost up to 15$ a pound.

If you cant catch one, go buy a few filets @3.99

take them to the Sausage Kitchen in OC and have them smoke em at 1.00 a pound.

Cut them up into gift size pieces before you drop them off.

Im very happy with their service.

So do they brine them or do you need to do it yourself?
Is it a drop off and then pick up a few days later or one day thing?

They do it all. Just take them the fish.

Definitely call first. Act now, if you want it for XMAS.

It takes at least 2-3 weeks to get fish back.

I have taken my salmon to Debbie D's in Tillamook for years and have not found a better place to smoke fish. They charge $1.50 per pound for what you bring thru the door. So if you bring a 20 lb. fish, it will be $30.00, BUT if you fillet the fish before you bring it in.........you should get 2 each 5 lb fillets.......so you end up paying $15.00. Plus it is vaccum packed and will keep in the refrigerator for 6 months no problem. You can also buy smoked salmon directly from them, but I don't know the price. Try the teriyaki smoke, it is unreal good.

I agree, the Sausage Kitchen is great, but a long turn around. If you need it right away try Otto's on Woodstock. They'll have it back to you in just a couple of days and they have a great pepper smoked recipe.. Sausage Kitchen does a great Teriyaki.

Capt. Bills smokehouse in Lincoln City. I have never bought smoked salmon but have tasted theirs and it is a good product. They would probably do mail order.

Buy a new right hand reel and I will trade you for some of my smoked salmon. Now your are talking a quality product.

Don't forget the "do-it-yourself" method. A Little Chief smoker and decent vacuum packer will get you in the game. Pick up some Pacific Pink Salmon - fresh if you can find it - but the frozen stuff they sell for $1.99 lb seems to work just fine. Do not get farm-raised fish - it sucks!! I've tried all types of meat - silver, chinook, pink, etc. and the pink salmon that weigh 3 to 4 lbs each makes the best overall smoked salmon product.

I've tuned my smoked salmon recipe through my friends and co-workers over the years. I'll usually fire up two Little Chiefs and filet up about ten pounds of salmon. Brine'em overnight in the fridge, then smoke'em six or so hours the next day. I let'em cool a little, then vacuum pack in gift size pieces.

We combine our smoked salmon with home made Raspberry Jam in gift boxes, throw in a picture of the kids and a card. Takes care of the most of the relatives each year. Works for holiday party gifts and gift exchanges at work.

Now to add up the cost. 20 lbs of whole fish - $40; brine materials - $10; vacuum bags - $25; vacuum sealer - $300; two Little Chief's - $125; smoking chips - $10; two dozen Mason Jars with lids - $20; 24 foofy Xmas gift boxes - $50; pressure/cooker canner - $100; plus about 40 hours of our free time (this means time we could be fishing) - $1,000,000. :grin:

What was the name of those places that do mail order? I guess my gift-giving is getting out of hand!! :shocked: :shocked:

This doesn't apply to smoked salmon...but if you like beef jerky...ya gotta try the stuff from the Sausage Kitchen mentioned above. Absolutely the FINEST!!! MMMMMMMMMMMMMMMMM. Check it out next time you're there. You won't be sorry. You'll be hooked.

A bit spendy, but high quality products and an Oregon business. Will also deliver anywhere in the world. Last minute Christmas stuff from Oregon, if no other better alternatives.

There is or was a tribe smokehouse just across the bridge in Depoe Bay. Excellent smoked salmon.
