Default Brine recipes for smoking. Any good ones?

Hey everyone,

I am getting ready for Xmas presents and need a good brine recipe for fall Chinook, Sockeye and Coho. What are your favorites???

Check the previous posts...use the search feature..there have been some killer recipies posted here as well as about 350 years of cummilative experience with smoking fish.. all you want to know for some very experienced people.

This is it...

Dry brine:

2 cups brn sugar
1/3 cup course salt
1 tbl ea:
garlic salt
onion salt
celeray salt
dry mustard
2 tbl black pepper

dip, leave overnight in fridge, and smoke

I have smoked and canned salmon for years and have always used a "wet brine" - using everything I could find in the spice cabinet and fridge. It was always good but sort of "labor intensive". Anyone who has smoked a lot of fish (and used a wet brine) knows that you have to rinse brined fish before smoking. Anyway, last salmon trip in Canada I had the pleasure of eating smoked salmon from a local-it was outstanding! I asked for the brine and was surprised to hear it was dry brine. Not only simple, but no rinsing or drying (until "tacky") before smoking. Here it is:

*COAT FILLETS IN SOY SAUCE
*SPRINKLE EQUAL AMOUNTS OF:
*RAW SUGAR (NOT WHITE OR BROWN)
*PICKLING SALT

*Let sit in (glass-stainless) container over night.
*Do not rinse - just smoke as usual
*try it - you'll like it!

I have a brine recipe that is really great, no time to post it now will send it to you later today. It is a wet overnight brine, and is great for Salmon and Steelhead.

Chinookosaurus.. E-mail me and I can give you a great recipe just like Angle This but in exact amounts and detail. It is uncanny that it is so close with the ingredients but maybe the same recipe. This smoked salmon is the best and not too salty.
