Default dry brine recipe for high-arc

heh high-arc.heres the recipe you asked me for.
Dry Brine cure for fish.
2 cups UNiodized salt
1 1/3 cups sugar
1 teaspoon Johnny,s or Lawry,s seasoning salt
1 teaspoon white pepper

Mix ingredients together good.Cut fish to size you like.I cut them into steaks because they stay together with the skin around them.Wash @dry them with papper towels.I put the steaks one or two at a time in a paper bag and sprinkle the mix on them to coat both sides.Put on your smoker rack and let dry for 30-45 minutes. You will see them dripping the water out of them.After drying you will than wash the fish and put back on the drying rack and air dry for 25 minutes or till they have a glazed look.While you are air drying you can plug your smoker in to heat up.Than your ready to start smoking your fish.That easy and in one day. Give it a try.
