Default How much pollution is in our fish?

Does anyone know how much pollution is in the local salmon steelhead or sturgeon? I was also curious if anyone fillets the skin and fat off their fish?

Most migratory adult salmon and steelhead do not have a polution problem. It is likely a different deal with the smolts as they out migrate thru long poluted waterways such as the Willamette. But the ones that survive metabolize out most polutants before returning as adults.

As for resident fish such as sturgeon, that's a different scenario. It all depends on where they have spent their time. The Columbia sturgeon have acceptable levels, the Willamette fish are questionable (I wouldn't eat a resident Willamette fish).

However, most of the polutants are stored in the fish's dark fat layers on the outside of the meat sections. If you filet off all the fat you have a cleaner product to eat.
