Dinner
So i wanna make something new tonight. What should it be and how do i make it? Lets not go too overboard, but im also getting tired of mac and cheese, potatos, steaks, etc... so something new.

Hoison, ginger, maple syrup glazed steelhead, coho, or even nook. Works on halibut too. Not sure how it would go with Mac and cheeze though.

Chicken Nuggets - This is a huge hit with my fiance, she asks me to cook them all the time and they are super simple.
Ingredients:
- 1 cup dry bread crumbs
- 1/2 cup grated Parmesan cheese
- 2 teaspoons dried basil
- 2 teaspoons dried thyme
- 2 teaspoons paprika
- 1 teaspoon salt
- 1 teaspoon pepper
- 3/4 cup butter, melted
- 2-1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes
Directions:
In a shallow bowl, combine the bread crumbs, Parmesan cheese and seasonings. Place butter in another shallow bowl. Dip chicken in butter, then roll in bread crumb mixture.
Place in a greased 15-in. x 10-in. x 1-in. baking pan. Bake, uncovered, at 400° for 15-20 minutes or until juices run clear. Yield: 8 servings.

Instead of boring old wooden stakes, try a nice sirloin steak. Ok, kidding aside...how about looking through the recipes board and picking something off there. It's kinda like looking through a restaurant menu, except you have to do the cooking.

I looked over them some however most of those recipes call for some form of game meat salmon or whatnot. And im fresh out of all that. So im looking for something i can just go down to safway and buy and throw together. Ill look through them somemore though

Zesty Chicken and Pasta
8oz spiral or fusilli pasta
1/2 cup Zesty Italian dressing (I used fat free)
1 lb breast cut into 1 inch pieces (I used boneless thighs)
2 cups broccoli florets
1 large red pepper, chopped
1 small onion thinly sliced
1 tbsp fresh parsley, chopped
¼ cup parmesan cheese (I used freshly grated)
Cook pasta as directed on package; drain.
Heat ¼ cup of the dressing in large skillet on medium high heat. Add chicken; cook 5 minutes or until cooked through, stirring occasionally. Add vegetables and parsley; cook 5 minutes or until vegetables are tender, stirring occasionally.
Add pasta and ¼ cup of Italian dressing. Sprinkle with cheese.
Can be made with shrimp, cut cooking time to two minutes or until shrimp are pink.

Western Skillet
1lb ground beef
3 cups water
1 can (14-1/2oz) stewed tomatoes
1-1/2 cups uncooked long grain rice
1 cup frozen peas, thawed
1 envelope onion soup mix
1 cup (4oz) shredded cheddar
In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the water, tomatoes, rice, peas and soup mix. Bring to a boil. Reduce heat; cover and simmer for 25 minutes or until rice is tender. Sprinkle with cheese. Yield: 4-6 servings.
**I add garlic, salt, pepper, used instant rice because I don’t buy long grain and rarely remember to thaw my peas. Oh and I always use extra cheddar…you can never have too much cheese!

We're doing Sausage Casserole tonight. VERY simple recipe I threw together when I was in the Corps and it was just me and the wife. I actually had time to play around in the kitchen some then!
We use the Hilshire Farm sausage
Old fashioned country noodles from Costco (any noodles will work, that's just what we use)
frozen peas
cream of mushroom soup
Tillamook Cheese (we use med cheddar)
boil water and add enough noodles for 9x13 pan
slice sausage to layer top of noodles in pan then chunk the rest to mix in
once noodles are cooked: mix noodles, cream of mushroom soup (1 or 2 cans depending on how "soupy" you want it), frozen peas ( we use about 1 small bag per pan) and chunked sausage.
Layer top of mixture with sliced sausage pieces and then cover with a layer of grated Tillamook cheese.
Bake at 375 for approx 30 minutes.
Great comfort dish served with potato rolls or sweet hawaiin rolls!!

try this
Classic Chicken Parmesan with Oven-Roasted Tomato Sauce and Smoked Mozzarella    4 boneless, skinless chicken breasts (5 to 6 ounces each)
1/2 teaspoon salt, plus more for seasoning pasta
1/4 cup all-purpose flour
1 egg, lightly beaten
2 tablespoons milk
3/4 cup dried bread crumbs
4 tablespoons olive oil
1 recipe Oven Roasted Tomato Sauce, recipe follows, or your favorite red pasta sauce
1/2 pound smoked mozzarella, sliced
1/4 cup grated Parmigiano-Reggiano
4 tablespoons extra-virgin olive oil
1 pound linguine, cooked al dente and kept warm
Freshly ground black pepper
2 tablespoons chiffonade fresh basil leaves
Position rack in upper third of oven and preheat oven to 400 degrees F.
Season each chicken breast with 1/2 teaspoon of the Essence and 1/8 teaspoon salt.
Place the flour into a small bowl. Place the egg and milk into a second small bowl. Place the bread crumbs into a third small bowl. Dip each chicken breast into the flour, then the beaten egg mixture, and finally into the bread crumbs, shaking to rid of excess between each step. Transfer to a plate and repeat with remaining breasts. When all of the breasts are breaded, heat half of the olive oil in a large skillet over medium heat. Place the chicken, smooth side down, into the skillet and cook for 4 minutes. Turn the chicken breasts to the other side, add the remaining 2 tablespoons of olive oil and cook for 2 minutes longer. Remove the skillet from the heat.
Spoon 1/4 cup of the tomato sauce over each breast and divide the mozzarella slices evenly among the chicken pieces. Sprinkle with the Parmigiano-Reggiano, and transfer the skillet to the oven. Cook until the chicken is just cooked through and the cheese melts, about 4 minutes. Adjust the oven setting to broil and continue to cook until the cheese bubbles and is lightly golden, about 1 to 2 minutes longer.
While the chicken is baking, reheat the pasta sauce if necessary. Heat the olive oil in a large skillet. Add the pasta and toss until warmed through. Season to taste with salt and freshly ground pepper. Add enough of the pasta sauce to just coat the pasta and divide between 4 large serving plates.
When the chicken is ready, top each plate of pasta with a little more sauce and top each serving with a chicken breast. Garnish with the fresh basil and serve immediately.
Note: Regular smoked mozzarella works better in this recipe than fresh smoked mozzarella.
ESSENCE Creole Seasoning
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly.
Yield: 2/3 cup
Oven-Roasted Tomato Sauce:
3 pounds Romanita tomatoes, cored*
1/2 cup extra-virgin olive oil
12 cloves garlic, peeled
2 tablespoons fresh oregano leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
Preheat the oven to 400 degrees F.
In a large, 14-inch, oven proof frying pan, combine all the ingredients. Stir to blend then transfer to the oven and cook until the tomatoes begin to caramelize, about 30 minutes. Remove the skillet from the oven and stir well. Return to the oven and continue to cook until further caramelized and much of the liquid has evaporated, about 30 minutes longer. Remove from the oven, cool slightly, and transfer to a blender, in batches if necessary, and process sauce until coarsely pureed. If the sauce seems too thick, thin with a bit of water or chicken broth. Use immediately or cool completely and refrigerate for up to 4 days in a non-reactive, airtight container.
The sauce is great on pasta as well as pizza and even makes a great dipping sauce for hors d'oeuvres. If you prefer a less rustic sauce, puree completely as described above and strain. Yield: about 4 cups sauce * If Romanita tomatoes are unavailable, use a combination of Roma and grape tomatoes to approximate the sweetness of Romanitas, or use another type of sweet tomato, such as Amorosa.

If you do the prep before hand this is a 30 minute meal.
1 lbs of raw prawns/shrimp 30 count..peel, set aside.
place olive oil (2 TBLS), 4 cloves fresh garlic and 1 shallot fine chopped into large skillet med high.
once oil reaches temp, add prawns/shrimp, add dash of kosher salt, juice from 1/2 fresh squeezed lime.
quickly sear/saute shrimp 3 mins each side flipping once(DO NOT FRY).....after the 6 mins and shrimp are opaque, take one jar of premade white sauce like alfreado, classic cheese etc...1 jar is enough to feed 3 with the prawns. I think Bertoli is the brand?...about $3 and add to the mix, heat about 5 mins to a simmer/bubble, salt and pepper to taste, and serve of linguine, fettucini, angle hair pasta.
grate fresh parmesean over it and sprinkle some fresh chopped basil.....fresh basil can be located in the produce in plastic cases usually by the shrooms...use the leaf only.
a nice salad would do great before, maybe add gorganzola, dried cranberries, and cashews, raspberry vinegrete!

All the above looks really good. As for what im working with im stocked up with the basics, flour, oil spices, etc... however i always buy my meat and veggies fresh. So thats up in the air as i know it will be a trip to the store for whatever i choose. Im thinkin around spending 10-15 ish at the store for a meal that will feed 2 people. So far though im really likeing the chicken nuggets posted at the top as i havent had chicken in Soooo... long.

Sounds like you don't want to do salmon, but I just made the following and it was good and EASY! I was a unsure how it would turn out based on the sauce ingredients, but I thought it was GOOD!
You need:
Salmon fillets, about 1 pound
soy sauce
maple syrup
salt and pepper
In a small pot, mix:
1/2 cup Maple Syrup
1/4 cup soy sauce
Put it on the stove and bring it up to near boil, and then turn it down so that is simmers. Stir every once in a while until it gets good and syrupy.
In the mean time, heat your oven to 500 degrees. Salt and pepper the salmon, and place it in an oiled casserole dish approximately the same size as your fish.
When your sauce is nice and thick take it off the stove.
Place the salmon in the 500 degree oven for 5 minutes.
Use a pastry brush to liberally coat the salmon with the sauce. Put it back into the oven for 5 more minutes, or until done to your liking.
Take the salmon back out and again liberally coat it with sauce.
Too EASY!

I call this rice and meat and cheese
*Cook 1 lb ground Elk (beef works too)
*Cook some brown or wheat rice
*Mix together and add seasonings (what ever you like...salt, pepper, ect.)
*Add shreaded cheese on top and melt in microwave
*Add salsa for flavor ( I also like green tabasco )
Serve like that and eat with a fork.... or with corn chips as a dip. It's cheap and easy and fills you up.

Cornish game hens with uncle bens wild rice. A fried apple or two. Add some grilled asperagus W/hollendaise and french popover rolls.
You can cook all this for 2 people for under 20 bucks easy. Its very easy to prepare. p.m. if you want.

Ignoring those more elegant and scrumptious suggestions made earlier -- several of which I'm copying --  Here's one as quick and simple as the Mac and Cheese.
Simply buy a box of Zatarain's Dirty Rice Mix or Jambalaya Mix (my favorites, though I also like their Red Beans and Rice and their Black Beans and Rice.)
Follow the directions on the box -- slightly less complicated than the Mac and Cheese. Boil water, add ingredients, lower heat, simmer, eat.
The Dirty Rice Mix recommends pre-cooking a pound of hamburger. The Jambalaya Mix suggests a pound of smoked sausage, pre-cooked chicken, ham, or shrimp.
The simplest and tastiest for me is to grab frozen shrimp from the freezer, microwave-thaw them, and toss them in.
Almost makes me break out in a Cajun accent. (I wish.)

Zatarains red beans and rice is veeeery good.
Seeing as I am in a hotel waiting for Cargill to "process" the turkey I am picking up, it was medium thin crust hawaiian from Chez Domino's, and a vintage 2007 Sprite.

I was in the same boat. Saw a recipe that was different. It came out great!
Stuffed pork chops. Slice a pocket in each chop. Make up 1 package of stove top type stuffing mixing it with sauted onion and celery. Pour on 1 1/4 cup broth. Stir in 1 can whole cranberry sauce. Put 1/3 of the stuffing in a baking pan and use the rest to stuff 4-6 chops. Cover and bake at 350 for 45 min. Uncover and bake for 15 min. to brown them.
Easy and tasted great with steamed asparagas.

Safeway has pork shoulders on sale right now for $.79 a pound.
Brown one in a dutch oven and pour in a can of tomatoes, some garlic, salt, chili powder and/or Cajun spice, tiny bit of liquid smoke, half a bottle of dark beer, and water as/if needed. Slow cook all day. 'bout dinner time, pour off the liquid and toss the fat. Measure out 12 oz of the liquid and add to one cup Basmati rice and cook. Rest of the liquid goes back on the meat. Great taco meat or eat as is.

I add a twist to this. When boiling, add the eggs along with a little can of mushrooms and a little can of jalapenos. After everything has boiled a few minutes, drain ALL water and put back on low heat. Take thin sliced cheese and throw on top. It takes a minute or two to melt, then sit back and enjoy.

So i decided to go with the "Chicken Nuggets" recipe the other night. And i have to say it was awsome. Made up 2 chicken breasts and had enuf for 2 people to munch on. Add alittle rice a ronie and a salad and in the end i had something i could call a meal. What made it even better was that i had everything in the kitched except the chicken. (Which is why i choose this recipe as well as i havent had chicken in a while)
Ive added this to my bookmarks so that i can come back here and snag some other ideas later down the road.
