Mine never lasts that long. I have my processor vac pack em in half sticks, seems to help. Cut 1/4 in off the end, smell it and it eat up to 5 days should be good to go! Pass the cheese and crackers! QW......p.s. I just reread your post, you got to refrigerate it, maybe 1 day out of the cooler tops.

Kerry, its good. I had one in the back seat of my truck v-packed for probably 10 days last November during late archery. Me and the boys snacked on it over two days when we forgot to bring lunches. It was fine..
As long as fat has been added to it and plenty of salt. I buy some salami that comes unrefrigerated and some italian salami ages for months in the open air- fat and salt.
