Default smoker thermometer

I have a Totem front load smoker and would like to be able to monitor the internal temperature. I bought a stainless roast thermometer with a 6" probe (shaft). I was thinking of drilling a 1/4" hole in the top of the smoker and sticking the shaft through the hole and using silicone to secure in place. Will the roast thermometer work? Melt? Any suggestions?

I use a metal baby dial thermometer that you can get at any hardware store. I use it to smoke sausage,fish and ****y with great results. If you search the thread about smoking temperatures I have given the name, author and place to purchase the book I have mentioned. I highly recommend it if you are serious about smoking meat,fish and sausge

You should be able to see whats left of a round dial meat thermometer just above the top left of the smoker door.

They only melt if you get the temp to high, some where around "open flame" temperature the dials tend to bury at the top of the scale and then not long later the dial melts along with the rest of the mechanisms.

BTW - thats not the back of the smoker you are looking at thru the door. That is the fence behind, the back of the smoker is in little black ashes about 4 feet below the photo [img]images/icons/wink.gif[/img]

Got this off of a site for modifications for a Brinkman:

- Obtain a good quality candy or meat thermometer that has a shaft at least 4 inches long. Obtain two matching corks, each about 4 times the diameter of the thermometer shaft. Drill a hole through the center of one of the corks (top to bottom) just slightly smaller than the shaft diameter. Now drill two holes, one in the side of the dome and one in the side of the body. The hole should be sized so you can push the cork in about half its height. The holes should put the shaft within an inch of the upper surface of each grill. Now you can monitor the temperature at the grills more accurately. Plug the unused hole with the undrilled cork.
