Chanterelles
I found sometihng that is quite good, Sturgeon fillets with a Chanterelle sauce.
Now, I need help, does anyone know if there is a good way to freeze or can some of these guys so that I can indulge throughout the year?
A link to a webpage that might set me straight?

I have a friend who does huge batches with butter and seasoning, freezes them in little individual zip locks for steak toppers.

Jen's right -saute in butter and package as individual meal's worth in pint freezer bags.Quick, easy and if your in a hurry for a meal or recipe suppliment they can be zapped and poured out on the plate.
This next week's rain should help things out.
Drying is not a reccommended method of storage.

I have heard of canning them after sauteeing(sp) does any one have any information on that? I am out of freezer space.

This is what I was told by a mushroom sage when I was picking today. she cans hers in 1/2 pints. She boils them first then packs the jars to the top and fills with water mushroom juice to the neck and then finishes the canning process.
Btw it was a good picking day!! Chantrelles, hen of the woods, shaggy manes and red lobster mushrooms. Let the feast begin!! We C&R cauliflower, red coral, dogbarf, orange coral and a bunch of other deadly poisonous types!!! Do not eat any mushrooms unless you can positively identify them!!! Learned how to find hedgehogs and chicken of the woods so that trip is coming up next I presume.

Hate to be a 'stick-inda-mud' on this subject, but....p l e a s e be careful if you are a mushroom picker. Check and double check your ID books. Took an entire semester class, at one time, focused on this subject (wild edible plants) by one of the nations 'mushroom experts'. He has written books,lectured etc., etc.
E.g.,Did you know that if just one spore of a nearby amenita iscariot was to land upon or germinate within your favorite patch of morels or truffels, the results could be deadly?
My professor's account after account of poisoned 'experts' made me truly mushroom shy. Not trying to wreck anyones fun. Just don't go out guessin' and also be very aware of the mushroom varieties that surround the ones you intend to pick!
...OK...enough of overcautious HOG...back to the recipes! [img]images/icons/smile.gif[/img]

Found one of those....amenita. Dang scary warning!! Didn't pick any near that one. I did cut it to show my girlfriend....wiped blade on pants....uh oh toxic pants. Guess I will be typing in the nude for awhile.

I would say to read to your hearts content, but go with someone who knows what they are doing the first couple of times until you really know.
You can learn some by looking at pictures, but it isn't worth taking any chances.
