advise on bad butcher shops!!??
Not to mention any names, locations or buisness names. I am wondering what I should do about a butcher shop? I took a elk that was de-boned to a butcher shop exactly one month ago today. I have called twice and each time they have told me that something else is not ready and they would give me a call when it is done. We went to this same shop two years ago with two whole elk and it was completed within two weeks. I had sausages and hamburger done. I am getting irriatated with the butcher shop. I am wondering if my animal was given away? Did it go bad at the butcher shop? They will not give me a time frame on when it will be completed. The last phone call he said one week that was almost two weeks ago and now some sausage isn't ready. I believe I should receive a large discount? What else should I do?? snowplow
P.S. If this thread is inappropriate in some way I apoligize. That is why I didnt name anyone. If I can name people, places and other things to give a bad rap, I WILL!!

Hey Kyle, you can, but it is requested that you first try to resolve the issue with the business and then if you decide to post the details here, you have to sign your full name.
Sounds odd that they can't give you a timeframe. Have you gone into the shop to try to get them to commit in person? Pretty easy to blow someone off over the phone. That gets hard when you've got a big angry guy in front of you.
I'd recommend you go on down there and ask them what it will take to get you your meat before December 21.

Sometimes it takes awhile for sausage and pepperoni etc.But I would be asking for a set date that it would be ready.
Very busy time of year right now for butchers.But itll be winding down pretty quick.

I've spoke with people at work and they said one week at regular working conditions. two weeks tops they either dont have the room, first come first served and customer service. One guy said he takes his to a place and gets his back in 4 days!! Whole elk, everything, sausage, pep and others. I dont question him, it's very fast, fastest I've ever seen, mabey it's a friend. But he did say no longer than one week.
By the way it's KYLE HAWES you can find me in a lot of places.
And nobody I,ve talked to yet has ever waited 1 month.

I'd call again and politely ask them for a date that it will be ready. If they don't give you one, tell them that you're on your way down to get your meat back and that you will go somewhere else to have it processed. Sausage and pepperoni usually take a little longer, but a month is a little too long IMHO...

Go to the shop and see what is going on. They can give you all kinds of excuses over the phone, but in person they have to look you in the eyes. Get your cut meat if it is ready and see about the sausage, etc.

walk in the door and take what meat is ready - than wait on the rest of the order. If there is a problem you will know immediately cause they will really side step all over the place

i always get the steak and burger in about 5 or 6 days.pepperoni and stuff later.i would think this free's up freezer space for others.i know where i bring mine they get upset if i dont come get right away.sounds fishy to me.

Father in laws best friend got a cow day before thanksgiving, took it in on the 26th, it came back today... 3 weeks. The one we got in the early season was done in 1.5 weeks... Depends on how many animals they are processing.
I would make a visit in person.

I have a ??? And I am a dummy! If you bring in say 80 lbs. of meat, do you always get back your own meat plus filler, or just what is next in line? Honestly, I have no idea!

Thanks on all the advise, I'll get out to OC on Wed do some fishing and get my meat. I work nights in the winter. Do you think I should ask for a discount or take it like a man and not go back!???

It depends...different places have different rules. Some shops you are guaranteed your own meat back, and some shops (while they don't tell you unless you ask) require a minimum weight before you get your own meat back. If you don't bring in the minimum, you get back what they've got.
I always ask when I go in to make sure. I wouldn't be so meticulous with the care of my own meat if I was just gonna get someone else's in return...give me MY meat!!

This one is a can of worms.... I operate a ranch raising and selling beef directly to customers, and one of the biggest challenges we face is having a quality butcher. Many of the small shops have gone out of business, with the remaining one's overworked. Many small shops, in my experience, will "skim" part of your meat for their own use, or with beef sell it in their store. Many have very poor control over whether you get your own meat back or not - they may be cutting three people's meat in the shop at the same time, and you just never know what you might end up with.
Fortunately, we have a relationship with a butcher who I know well and trust. He knows my concerns about the industry, and works hard to make sure I am satisfied and happy. Unfortunately for the hunters out there, he is busy enough he does no game processing any longer, and even restricts the number of farm animal customers.
I would go to the shop, not phone, and demand the meat. If it is not processed, ask to see the carcass and smell it. After that long, in a cooler that sounds overworked, you have a very high risk of having it bone sour. Tough situation, no good outcome....
