Default vaccuum packing roe

Do you cure the roe before vaccuum packing or do you cure them after you thaw them out before using them? Just curious what has worked best for you. Thanks

I would definitly say cure them first. You will have much better results. If the eggs are large like from a tule or fall chinook, I would recommend curing the eggs then after a couple days freezing the eggs in your vacuum pack bags before sealing them. Once the eggs are frozen solid, seal the bag. This will keep them from smashing.

I know folks without a vac packer that poke a match with the head up into the skein then light it and put the lid on and seal it up. the match burns most of the air and provides the same result. I kind of think that it would leave a smokey scent on the eggs but he catches lots of steelhead and I still think they are an urban ledgend [img]images/icons/confused.gif[/img]

Of course I agree with Amerman since he is the "Eggman". I think that the best way to freeze eggs is in jars after curing with a vacuum sealer jar attachment. If the eggs are too dried before freezing, you may get freezer burned eggs over time. It is best in my experience to leave the eggs alittle wet with juice and Now is the time with a wetter egg... atleast for the tidewater. Cure those eggs with Amerman cure for about 2-3 days and you will not be disappointed. Just my .02
