Default Deep Fried Salmon

Anybody cook salmon like you would cod? I have never done this .... Batter and deep fry?

Anybody know what skippers uses as a crust for there fish? crackermeal or cornmeal?

Soak coho cubes in milk for a few minutes and then roll in krusteaz or golden dipt fish fry. Before you fry the fish, fry a few garlic cloves in the oil for flavor. Deep fried salmon is extremely underrated and a nice change.

Beer Batter

· 1 Cup all purpose Flour
· 1 Tsp Baking Powder
· 1 Tsp Salt
· 1 Tsp Old Bay Seafood Seasoning
· 3/4- 1 Cup of your favorite Beer
· 2 Eggs, separated


In a separate bowl, beat egg whites till they form stiff peaks. Stir flour, baking powder and salt together. Mix in beer and egg yolks. Fold in egg whites gently. Dust ¾ inch cuts of fish with flour. Dip into batter and fry in hot oil until golden. Serve with lemon wedges and tartar sauce.

Try this one, you won't be dissappointed!

I made some blackened salmon last night and man did folks rave about it. It's very simple to make and when cooked it makes a crispy outer coating with a soft and firm inside. To prepare it:

Filet fish, remove skin and any of the gray fat

I soaked mine for 1 1/2 hours in a blush wine.

Jar of Cajun Choice spice, found in the meat department of stores.

I use a cast iron pan and pour in olive oil and get this as hot as you can. Coat each side of the fish with the cajun spices and put into the pan. Cook each side a few minutes. The fish will turn black on the outside but it is not burnt. One thing about this method is it does create smoke because of the heat so have your fan running and doors open. Drain fish after cooking on paper towels and serve hot.

When I do this Marty, I use a needle nose pliers and pull all the bones out so I can just enjoy eating those great deep fried salmon cubes.

My favorite variation on this theme:
Mix equal parts of finely ground cracker crumbs, flour, and grated parmesan cheese. (Yeah the cheap stuff in the green tube)
Season the cubes with a lot of black pepper and a little garlic salt, pour a beaten egg over all of the cubes and allow them to drain. Then toss the whole bunch into a bread bag containing the breading, and shake it all up, Sergio Mendes style. Fry in 375 degree oil until brown. Don't burn yer tongue. Pull out all the bones with a pair of tweezers then buy the panko breading at the local store and follow the directions,it's great for a change but nothin beats fresh butt or sea bass.Good luck,

A little off the subject but what I’ve found is Salmon bbq’ed on a cedar plank. Some of you ol’ timers are sure to know that but to this young pup it was heaven.
For those not in the know here ya go.
Go to Fred Meyer’s at the meat counter and buy a three pack of cedar planks ($9.99) ouch but worth it
Soak plank in water for 20-60 min. before starting.
Place an air-dried filet skin side down and trim to fit plank.
Sprinkle thin sliced almonds and Italian seasoning over filet
Then mix butter, maple syrup and brown sugar (slightly microwave)
Baste with concoction heavily
Preheat bbq to around 350’
Place plank in center and close lid
Check 10-12 min. (just until it flakes)
Remove and place plank on table as your centerpiece and serve right off plank.
When done toss plank in trash
Be cool, as the complements will be flying

I'll second that on the Cedar Plank BBQ Salmon.. But save yourself $9.99 and by shingles or I just use some old ones from the inside or a remodel.

Try it w/ out the sugars and instead use 1 part butter, 1 part olive oil, 1/2 part lemon juice.... add seasoning salt, dash of old bay, course ground pepper, and rub some garlic on there..... if your feeling really adventurous add some sliced Walla Walla Sweet.

Crank up the heat at the end w/ the lid closed and it will sear the top...

Amen Brother,
i've tried the shingle, too thin. the magic number is 3/8" thick. I've since bought lumber and have it planed down to 3/8 .
but they way i see it. I've spent hundreds no thousands of dollars in presenting the lure to the fish $3.33 in presenting the fish to the family and friends is pretty cheap. And the biggest thing is "IF THE WIFE IS HAPPY THAN I'M HAPPY"

Thats why I'm a bachelor and answer only to my boat and chocolate lab.... They rarely disagree with me..….. I’m usually cooking small portions so I just use the thick end of the shingle. [img]images/icons/grin.gif[/img]

Three hours to dinner and you guys are making me hungry!

Try the tempura mix you find right next to the 'Panko' bread crumbs. Leave it kind of lumpy, dip the fish chunks and then roll the goey ball in panko bread crumbs. Then hot peanut oil at about 350 for 3 to 4 minutes or until it floats. Guaranteed, no leftovers. Sea scallops and Halibut are non-pareil this way as well. Cest Magnifique!

This is the real deal smiles,I have done this for people that did not like fish(works great with all fish)and after tasting this came back for more .Go to the store albertsons, maybe safeway) and get a box of mccormicks "GOLDENDIPT"batter mix, they make different seasonings like tempura and cajun but get the "ENGLISH STYLE,FISH `N CHIPS" We use the deep fryer "fry daddy" cuz you don`t have to use a gallon of oil.Just mix up some of the mix with water to get a pancake like consistency and fry till it floats.Happy munching [img]images/icons/grin.gif[/img]
