cooked duck!
Me and a friend when out yesterday for about 45 min and the 2 of us shot 6 ducks and i got my first wood duck  . Had a couple of cleaned duck sitting around today so i decided that i would give them a try. I looked and found many different recipes to try but i decided to cook them with the basics only. Heated up some olive oil and tossed them in with a little salt, pepper, garlic salt, and onion salt. After they were done cooking i left a few chunks in and threw some jalepeno jelly on top and let melt. Wasn't sure what to expect because alot of folks don't seem to like duck all that much. Well i was pleasantly suprised. It was pretty darn good. Last year i would give my ducks to my hunting partners for jerky but not now.

I always soak my ducks in a salt water bath for an hour or two. this will get the blood out of the meat and will make it taste even better then you just had.

Try This. Soak duck breast pieces in Italian dressing over night. Then cut up onion in wedges. Peel the wedges apart and place a piece of meat in one. Then wrap with bacon and BBQ. While cooking keep sprinkling with Worcherstershire sauce. You will be surprised again.

Red wine or milk will also draw out the blood making your meat taste better.

cut breast in 1/4" strips, brown in olive oil, add 1 can green chiles mild, terriaki sauce, chinese 5 spice simmer till done, add 1 bag frozen chinese mixed vegtables cover till done serve over white rice.

I am very partial to soaking the duck in buttermilk. Has all the advantages of milk and salt water while also tenderizing the meat a bit. I will soak the duck from 24 to 48 hours depending on the duck (whole mallard 48 hours).
Then put a nice salt rub on that baby, through it on rotisserie with some hickory and mesquite and MMMMMMmmmm!

Its amazing what we will do to a duck to make it not taste like a duck. I cut all the meat off of mine and freeze it. At the end of the season i'm going to have some pepperoni made

I've have seen the light of duck pepperoni, and it is good.
Taste much better than any duck I've eaten.

Duck pepperoni is real good. But if you are going to fry, in my opinion nothing beats using coconut oil. It's alot better than olive oil for letting the flavor of the spices through.

I like to bake my mallards. I rub the inside of the body cavity with rubbed sage and fill it with cut up green apples. Then I rub salt and pepper on the outside and maybe add a little Tony Chachere's seasoning and basil. I might even add a little white wine if the mood strikes me. Bake at 400deg for about 75-90 minutes depending on the size of the bird or how many I bake at a time. I make gravy with the drippings and serve over rice. Wild rice is best.
And then there's duck gumbo. Duck stir fry. Fried duck fingers. Jalapeno duck breast poppers. Stuffed duck, etc, etc, etc. The last way for me to eat duck would be pepperoni.

Speaking of Gumbo...
I was fortunate enough to get a plate two years ago at the "Opening Day Duck Jambalaya Feed" Saturday night. It was made with birds shot that day.
I will never, ever eat a better duck. That Jambalaya was outstanding. We licked that pot clean.
Pan fried is my stand by. Dredged in seasoned bread crumbs and fried in olive oil. Simple and delicious... but then, I like the taste of duck.
I also soak in orange juice... seems to do the trick.

one of my best, is to make duck jerky! its great out in the blind the next day and easy to do if you have a smoker.
First- soak the meat with what ever you use to get the blood out(I use salt water)
-wait two hours then rinse the meat, cut it in to 3/4 inch strips and throw it into a bag of Vary Vary Teriyaki for around 3-4 hours
- Finally, throw them in the smoker for around 4 hours (I forget the temp of the meat)
this is one of my favorite way to cook duck and it is great!!

I like the taste of duck so one of my favorite ways of cooking is the easiest. Put 1/4 small onion, 1/4 apple, and a table spoon butter inside the duck. Wrap in foil and bake on 350 for 45 min. to 1 hour. Salt and pepper to taste. It's great.

Ohhhh! You boys work WAY too hard!! Soak braests in salt water one day; clear water (change it each day) two days, and rub 'em with olive oil, S&P, garlic powder and the secret celery salt on the George Forman grill for 7 to 8 minutes. You'll never put another duck in the freezer (or make jerky out of it!! What a waste!) My kid thought it was steak! Never told him either!
I do have to admit that I have had some really good duck sausage. Mix 50/50 with bacon and grind it up. Add spices you like. It goes good with hash browns and eggs. I gotta go- I'm getting hungry!!

Terriaki Stir-Fry....this is my main duck dish as well.

After a saltwater bath, I do like Richard and slice to 1/4" toss in a zip-lock with some terriaki sauce and toss in frig for 2-3 days (shaking the bag every time I open the frig). If we use it in that time, great, if not, it goes in the freezer for later use or jerkey. Either way it's already marinaded.
For jerky I just add brown sugar, salt, pepper and liquid smoke. Let sit for a day in frig and toss on dehydrator. (You can search here or the recipe forum for the Knifong Family Jerky recipe for specifics).
WF101 has an awesome Apricot Duck Kabob's Recipe that is to die for. Yum, Yum.....
Swamp Puppy's Duck Chili recipe....I have some duck soaking for that right now.
Just chunk it and marinade in a salt/chili powder brine, drain, package and freeze. Great for football playoff season. (Same with BP's Duck Chipolte Dip)

PS: if you really want to take the duck taste out of duck or goose, pre-cook and let sit in frig for 2days and then reheat and serve.
Example: mushroom soup over goose breasts & rice. Lightly cook 4 breasts (Rare) in the soup. Then let soup & breasts rest in the frig for a day or two. Then add 1" layer of instant rice to 9"x13" pan and lay breasts on rice and pour soup over breasts. Cook on 350F in oven till rice is tender, remove & let cool 10-15min before serving.

I too really like the taste of duck, and probably wouldn't hunt if it weren't for that reason. I think it's funny how much work people put into making duck not taste like duck but to each their own.
For me I like it best cooked on the BBQ with some Johnny’s Seasoning, cooked medium rare; quick and simple.
There's a little strip of meat under the breast that just peals away, not sure what its called or even if it has a name. For that I put foil on the bbq, coat the foil with butter, then put onions, mushrooms, salt pepper or maybe lemon pepper. That is usually an appetizer.
Kabobs with onions, mushrooms and fresh pineapple is also very yummy.

how do you make poppers??? i love duck and i love jalepenos??? also i was thinking about your duck jerkey, could you put some habenero spices on that meat while in the smoker/dehydrator and would the taste of the spices absorb into the meat?

We fix 'em all kinds of ways...
Tonight we had Duck Tacos.
Mallard meat cooked down in a pressure cooker for a short while (speeds up the cooking process greatly) that then came out like shredded beef.
Add some Taco Seasoning and some onions...simmer that for awhile in a frying pan then the meat went onto large flour tortillas to make Soft Tacos...some grated Bandon or Tillamook Cheddar sprinkled on top then thrown in the microwave to get nuked for ~20 sec. to melt the cheese.
Add chopped fresh tomato, chopped lettuce (some cilantro if you like), chunks of Avacado, a little Salsa, a dab of Sour Cream...
Tacos don't get much better than this!

Put the breat meat in a zip lock bag the pour a can of coca cola in with it. Let it soak overnite. Heat up butter flavored crisco in skillet to med high. Take duck out of bag, pat dry, roll in flower and seasoning. Fry for five minutes max. This is a recipe I got from a chinese resturant and it is great on all waterfowl(even spoonies). You can also cut the meat into strips and then fry. Enjoy:grin:
