Your favorite upland bird to eat?
If you had to pick one (or two) upland birds to eat, that is, your favorite tasting upland bird, which would it be?
Pheasant?
Chukar?
Hungarian Partridge?
Quail?
Sage Grouse?
Ruffed Grouse?
Sharptail Grouse?
Blue Grouse?
Am I missing any?
I don't know if I can choose between a ruffed and sharptail grouse. My favorite upland bird to hunt is Quail, although Quail is pretty high on the eating list too.

1. Ruffed Grouse
2. Quail (I can't tell the difference between mountain or valley)
3. Blue Grouse or Pheasant (toss up)
I think a lot of it depends on the birds diet.
Never had Sharptail Grouse that I know of.
Bottom of list would be
Chukar
pigeon
crow

Any grouse and then pheasant. When you shoot them with a bow they become a real delicacy.

I grew on Huns on rice with a fair mix of Chukar thrown in from time to time.
But I'd have to say those grain feed Huns were plentiful, tender and YUMMY! 
Nothing like seeing a bunch of little heads popping up & down out of little holes in the snow.

Mine goes like this:
Blue grouse
Huns
Quail
Pheasant [wild not farmed]
Ruff/Forest Grouse
Chucker
Squab [grain fed]
Dove
Snipe
Sharptail
Sage Grouse
By order of Field Collection:
Pheasant,Quail,Chucker,Huns, Blue Grouse,Sharptail, Squab, Snipe, Sage Grouse.
They all taste great and free range too.

Treb, I see that Sage Grouse is on the bottom of your list too.
I'm not knocking the guys who like them, but the ones my Dad and I shot when I was a youngster didn't taste very good, so we stopped hunting them.

i think chukar are by far the best...
Then quail...
Not nearly as big a fan of pheasant compared to the other two...
I am not sure western grouse actually count as a game bird, since they are so damn dumb, but they are tasty as well.

sage grouse is on the bottom only because i have one from my recent trip to montana.
it may move up but it may take some sweet fixing based on what i have heard

grouse are not dumb.... they just believe in there ablity to blend in with whats around them.
if you didn't see them land you might not find them again. if your shooting them on the road let them fly a bit deeper in the woods and try to find them

if you want to see a smart grouse, go to the NE and hunt them back there... thats a game bird.

Sharpies and Sage hens (try a spicy stir fry for sage hen, mmmm)

Quail First! Likely what I would say is next would be that years ruffed grouse out of last hatch! We got some once that were hardly bigger than quail.
And sage grouse is great eating stuff as long as you have the discipline to not shoot the big black Boomers (large Males). Those guys are best left to live another day. But it is natural to shoot them because they standout so well compared to the hens and young ones. I know the fish and game checkers always thought we did not have enough males in our take. Seems they keep track of that sort of thing. They even accused us of leaving the males one time. After you hunt them for a while it is easy to tell the difference. My grandfather would always make me eat the males if I shot one! I learned not to shoot them.

Kurt, I think you'd really like grouse. It was one of the game animals my good Mother did not mind cooking for us. She used a plug in fryer, on low heat, and cooked them slowly for hours until the breading was golden brown. The gravy was light and delicious. Simple, but my Father and I looked forward to grouse hunting together because of the eats. He'd say, "I'm hungry for a chicken, you wanna go." I never turned him down.

Wild Midwest corn/milo fed pheasants are hard to beat for me same with the quail. Never had an Oregon grouse or pheasant though.

My two favorites would be Quail and Blue Grouse. Of the two, Quail is the best eating, but I would starve relying on my shooting skills. Trust me, not many Quail are harmed when I hunt
Young Blues are excellent eating and a couple makes a good meal.
I've no experience with Pheasant or Chukkar and my one sage grouse was pretty rubbery. Ruff Grouse are OK, but I don't hit many of them either.
In general upland game birds are pretty safe when I'm stomping around with my shotgun and dog.
