BREAKING NEWS, NEW BRINE RECIPE DISCOVERED !!
Hey all,
First Thanks to everyone who responded to the "Who has the best Brine recipe" thread, great recipe's that I printed and put into THE cookbook.
One thing I noticed in common with most is the use of salt so that tells me it either extracts the oil or dry's the fish. Either way after very careful analysis of the recipe's I created one tonight which I will let you know later the results thru various taste testers how it tasted. My intent was to create a somewhat spicy, peppery flavor, no sweetness but a taste that would go great with a great darker micro-brew of your choice The ingredients are:
<UL TYPE=SQUARE>2 teaspoons of dill weed
2 table spoons of garlic salt
2 teaspoons of lemon-pepper marinade
1 teaspoon of garlic pepper
1 teaspoon of Cajun Choice spice
1 teaspoon of Johnny's seasoning salt
2 Quarts of water
I'm going to let this brine for 24 hours and start smoking with alder wood. I believe this might be a new recipe that Luhr Jensen could be interested in
If I can make it to the Ifish Q I will bring some for the taste testers extrodinaires. I can't eat the stuff...yuuuucck, aagghhhh, phooooeeeyy, Put the steak on the grill PLAAEESSSE !!!
