Default FISH RECIPES

Call me a fry, it aint no lie!
I am lucky to have a dad who taught me how to fish and gave me fishing memories that will last a life time. We fish a lot on the Coast, Willamette, and Columbia slough. However, I am now just getting away from using all my Dad's terminal gear and set-ups. I've figured out what lines to use and what poles and set-ups work best for either sturgen,salmon, or steelhead. I just need one more thing. A great recipe. I want to go back home and show my dad that not only has he taught me to fish better than he can, but also that now I can cook better than he can too :smile: So I need an awsome recipe, im thinking steelhead!

Ohh, he also showed me a great web site, ifish.net! What a great man! I wish I can be half the fisherman he is.

What type of recipe are you looking for? Do you want a smoking recipe or a baking recipe? Is your dad a member on the website if so whats his name?

baking would be good, however any recipes for myself and others would be great! My dad is "silver bullets" dad.

Simple grilled steelhead:

Catch fish and bring it in quickly
Kill and bleed fish ASAP
Gut and remove gills and kidney as soon as bleeding finished
Rinse inside and out
Put ice into belly cavity and cover fish with ice
Filet fish when you get home

Light grill and let it get hot
Brush flesh side with lemon juce/butter/tobasco/salt (mixed to taste)
Put flesh side down on grill untill browned
Brush butter mix on skin side and flip over
Brush more butter sauce on flesh and toss a handfull of smoker chips onto grill
Cover until it quits smoking
Check and see if it is done (flakes)
Eat

This works good on trout, coho, sockeye and smaller chinook too.

The best consistent recipe that I have found was given to me by my father in law and works on just about any fish but particularly salmon. It is one of the simplest I have found and the one I always end up going back to.

1/2 cup soy sauce(Kikkomans)
1/2 cup olive oil(or vegetable oil if that's all you have)

Mix up these two ingredients until they are thoroughly blended together. It's easier to slowly pour the oil into the soy sauce than the other way around(oil and water don't mix very well). Once you have combine the oil and soy sauce baste your fillets and let stand for 1/2 hour or so. Throw your steaks or fillets on the barbeque and make sure to baste liberally with the sauce while cooking fillets. Whoa, I just made myself hungry....I think I call the wife and have her pull some salmon out of the freezer for dinner...LOL

Heres a recipe I like in fact I just had it last night. Its for deep fat frying though I don't know if your looking for this type of recipe but here it is.

Take pride of the west and mix it with water in a bowl. Then take panko(Japeneese breading) and put some on a plate. Put salt and pepper on both sides of the raw fish. I like mine in smaller pieces and that is what I would recommend. Soak both sides of the fish in Pride of The West then roll in Panko. Then the last step is to put it in the deep fat fryer until golden brown. You can dip your fish in tarter sauce or what I like to do is put a little lemon juice on it and it runs out great. :smile:

- Tamari (less salt) soy sauce ( Don't use regular soy sauce!!!!)

- 4-8 cloves garlic crushed

- 1T brown sugar

Mix together. Marinate on fish for about 15 to 20 minutes. Throw it on the grill and cook skin down till flaky.

NOTE: When the fish is done remove the fish from the grill, but leave the skin on the grill. Remove it after it has cooled.

Serve with a green salad and a baked potato.
