Default Amerman Salmon eggs have you bought them?

I know a lot of you Ifishers have bought eggs from me over the last couple of years. What did you buy, what did you think of them and what can we do to make our product better. Tell your story. Did they work for you?

Scott, I bought 15 lbs of fresh springer eggs a month or so ago. They were excellent, in great shape and cured up just perfect. I have caught quite a few springers on them in the last month. Thanks again and from my view everything was great. Dealt with Ed and he was very helpful and excellent to deal with. Thanks again, saved me this spring.

Scott --

I bought a 2 lb. jar of your salmon cured eggs a few weeks back. I have used them once on the Clackamas. I didn't get any fish or bobber down - but I wasn't the only one. I liked your quick service (shipping to Portland was not a problem). I think the eggs will produce for me. It probably won't be until the fall that I will try them again.

Bill's got a secret.....Bill's got a secret... I remember reading your post about some springers caught on eggs and for that period in time, trying to figure out where. I'm all ears....err eyes.

Scott, are you curing your eggs with the same cure you fish with? I've heard the Amerman egg cure is legendary and the recipe locked in a vault. A closely guarded family secret.

Never tried your eggs and would like to this fall.

ifish board member "Sandshrimp" bought some from you last season and he cured them up himself.
He was nice enough to let me try some while out fishing this spring and they are the best quality eggs I have ever seen!
They looked great, fished great, and they caught fish!
I will be placing an order soon!!!!

Thanks to all that have posted. Stz II if you click on the Amerman eggs on my first message or on this one it will take you right to the web page. Bill I heard about your stories. Sounds like fun to me.

We are getting a fresh batch of eggs into Portland Friday afternoon. The eggs are really starting to look good and more mature. They will only be a couple hours out of the fish when I can have them to you.

Thanks Scott Amerman

Hookset Yes this is the same cure we have worked for years to figure out now we are sharing it with everyone else. I sold some eggs to a guy on the Santiam last week and he caught 6 springers today.
John Ok since you said all the nice things we will let you buy eggs again. But only this once.

Scott......and would this fisherperson have a name like Grant? Just a guess.

Man, I'm really going to buy some eggs now that I know it's the family recipe.

Any chance you may start selling just the egg cure?

Hook
The guy who caught six yesterday on Amerman eggs was a friend of Grant's but not Grant. I have not talked to Grant yet to see how he did. I heard he had a couple of fish in the morning from some one on the river, but I did not hear a total for him. I do know that Grant using my eggs caught 7 one day a couple of Sundays ago. Maybe that is what you were think of or maybe Grant got 6 yesterday also. I know his computer is down and he can not post on here right now so I will have to tell him that we are talking about him.
As for right now we are not going to sell the cure. We figure that way people have to keep coming back to us to get these eggs. We want to show people how great they work and make them want to come back.
Thanks Scott Amerman

Back to the top one more time. We are getting fresh chinook eggs into Portland all this week. We should have fresh eggs at least three days this week and they are starting to get to an early fall Chinook size. We also have lots of cured eggs available for both Salmon and Steelhead.

I bought some of Scott's fresh eggs last fall. Although I never purchased his "secret recipe" eggs his fresh eggs are just that- "fresh". I cured them up and experimenting quite a bit was very happy with the outcome. I think next time I will also try the "Amerman" egg although mine turned out pretty dang good.
Too bad Cure-All went out of business.

I bought uncured eggs last fall and they were very fresh and cured up great.I will be buying more today. If you need eggs I would definitely buy them from these guys.I only wish the springers I caught this year had more mature eggs in them.Small price to pay for catching crome springers though. Tom,
I am glad that you were able to get some of the eggs. I hope you are able to get out and use them. To bad you can not use them on the Nestucca, and I would avoid the Trask since it is not planted with Summer steelhead, and it is closed to salmon fishing as is the Wilson. There are Steelhead in the Wilson, but the water is really low, so I would leave the drift boat at home. I would fish the upper river from the bank. From what I have heard the Clackamas and the S. Santiam are the place to be. I have had a bunch of people who have bought eggs tell me the Upper Clack from a drift boat has had lots of Springer. I know how many are making it back to the Dog Creek Hatchery because we are getting the eggs out of it. I know there are spots around the hatchery that you can fish too from the bank. The South Santiam has been hot. Lots of people I have sold eggs to have been slaying them over there. The best drifts there are to fish from Foster Dam to Sweet Home or Sweet Home to Waterloo. There are also bank fishing opportunities there at Foster Dam, Sweet Home boat ramp, Waterloo Falls, and the green dam above Lebanon. I know I sold eggs to a guy that hadn't caught a springer before, and he hooked 6 and got 3 springers one day this weekend from Sweet Home down. I also had a couple of the guys over there (see above) that did really well this weekend.

Scott,
I got your e-mail. Yes I did get hooked up with Ed. I only bought a pint of cured eggs this time. I did go out steelheading at the Nestucca and found that I could not use Bait.
My friend did catch a nice 9 lb. hatchery fish though. I was busy rigging when thebite was on ,so I missed out . i was wondering if you have any god spots to try out your eggs in the Wilson ot Trask? We can use Eggs on them. They sure are Purdy. I look at them every time I open the fridge. It just makes me want to drop my honey do list and take off fishing. So far I haven't let my wife down and am looking forward to Thursday morning this week. I sure could use some info on some good holes or drifts. Clue me in if you can. Thanks for the eggs . Tight lines. Tom

Thanks for the Great report on the Santiams and Clack. I haven't fished those streams as of yet ,but, I plan to. I have friend with a boat from Garibaldi and am heading back out Friday to get Silvers and if I get reel lucky, my first nookie. Had one on on 6/30 out there and it was taking line quite fast. I fought it for nearly 15 min. and was gaining on him ,nearly to the boat because I could see the flasher and "PLINK" line goes slack. I reel in and the knot came loose at the leader. .The "MAN" said he had step on that one earlier and should of retied it. We did limit for the day with one other Springer in the boat . My 2 Silvers were biggest thuogh 9# and Almost 12# hatcheries.

Thanks to everyone who posted. I couple of quick things to add. We are getting fresh eggs now and should over the next month or so. But the ODFW has said that there will be no more hatchery surplus eggs in the future so we are uncertain at this time if there will be any eggs in the future. They are changing the way the deal with surplus fish (as some of you may have read in the Oregonian 7/7 ) after the clubbing bad press. So we know we will have fresh eggs tell around mid August then who knows. We will try to find other sources but we are sure we will not get the same unbelievable high quality egg we are getting now. So if you have been waiting to get these eggs you must act fast and get your name on the list. We are taking orders for the eggs and will fill them in the order they come in.
Also on a positive note we are currently in the process of getting our cure out on the market. As we have been asked by so many people if we will sell it, we are giving in to the all might dollar and hope to have it on the market by the early fall. We will keep everyone updated.
Thanks Scott Amerman

Hey Scott, Your eggs are top notch, and maybe here is a good place to answer a question; How long, approximately, will those eggs last in the fridge and in the freezer? I will be ordering some soon but I would like to here some tips on storing them.....Again your eggs are most worthy and your service is impossible to beat! Thanks!

Uncle Roman,

The storage and shelf life of this product depends upon whether you are talking about fresh eggs or cured eggs. The shelf life of a fresh egg is very short. I generally try to get the fresh egg out in the first 5 or 6 hours out of the fish. I believe after the first 24 hours the quality falls dramatically so I would advise curing them as quickly as possible.

Our cured eggs will last for months in the refrigerator and for a year or two (I've never had any long enough to go bad) in the freezer. So after purchasing cured eggs, I would recommend deciding when you will use them and sort them accordingly. Anything you are going to use in the first couple weeks, I would leave in the refrigerator and anything that you won't use in the first couple weeks, I would freeze. These eggs freeze very well and should show little or no difference after being frozen.

Thanks,
Scott Amerman

hey,
here's a little tip for freazing eggs (cured ones)and (if you don't have a vacume packer) put them in a jar, caning jars work good, and before you put the lid on light a little piece of paper on fire throw it in the jar and screw down the lid, the paper will burn up any excess oxygen in the jar and a lot of the time will even seal the lid down on the jar. keeps the eggs from getting a frezzer burn. ChumSalmon
Thanks for the great tip. It works well when doing jars. Using a match, sticking it straight up out of the eggs, then burning the striking end with another match as you put the lid on will also work great. Another way I usually recommend to people who buy eggs is save all the extra juice off the eggs after curing them or before you use them. Then when you freeze the eggs you want to keep for the next year, pour the juice back over the eggs. So I would use the same jar and freeze it and the eggs. Once the eggs are frozen, I would pour the juice over the top of the eggs, then put the lid back on the jar. This will seal the eggs in better than vacuum packing or doing the match/paper in the jar trick as now no air at all can get to the eggs.

hey, good tip! I've heard of guys doing that with wax but, i've never taken it to that extreme but, the juice is a good one, most of the time i go through my eggs before i would ever worry about them going to waste but, i'm going to make sure and tell some of my fishin buddies about the juice, makes a lot of sense! thanx again for the tip

Another trick is to put a little of the extra juice in with the eggs, or over fill a container so some of the eggs smash/break when you force the lid on, and put the eggs in the fridge or freezer in the upside down position. The juice will run down around the lid and seal it. Leave them upside down so the seal wont dry out, kind of like storing wine on its side so the cork wont dry out.

Thanks for the tips, guys! My vacuum sealer has that lid-sucker-downer on it, and I feel better when I use it....Hopefully I will use the eggs before I need to freeze them, but you never know......

Great tips.
Another tip for freezing eggs is if you have vacuum packer. The best way I know to vacuum pack eggs for freezing is to freeze them first before you vacuum pack them. You can do this a number of ways. You can freeze them on a hard surface such as a cookie sheet. Another way is to freeze them in the bag you will vacuum pack them in. You must keep the bag upright for this manner. Another way is to put them in a small bag for freezing then vacuum pack the small bag of eggs, bag and all inside your larger vacuum pack bag. Just more hints on freezing eggs. If you have more, pass them along.
