How Long....

Do I smoke my sturgeon at 200-225 deg. I will have it in a electric watersmoker without the water pan. Just took it out of the brine and letting it dry. Gonna be watching the late show tonight.....? Hope not.

Around 2-3 hours. I�m guessing my charcoal burns around 180 degrees and it takes 3-3.5 hours.

Doesn't Charcoal burn hotter than the electric fuel?

With the *** smoker I have, I have to smoke when the outside temp is less than 65 degrees. If you don't use much charcoal it dosent get real hot since it does not get any air flow by design. after a few chrispy critters I figured it out. I usually use the water tub and I have yet to see the water boil so I know it's less than 220.
