Default smoked sturgeon

was wondering if any one had a good recipe for smoking sturgeon i personally have never smoked one and would like to try it any help would be greatly appreiciated

I smoke it the same way I do salom. I like to cut the meat into 2" cubes and smoke, then add some cajun seasoning tossed in as they cool.
It's awwsome. Drop me a note and I'll give you a recipe I've used for years.

I've cooked it as simple as a salt/ brown sugar recipe in the Luhr Jensen and it was awesome. I am sure you can play withit though. Don't overcook it!

I like to experiment but a good general recipe is to soak the fish in a brine consisting of soy sauce (~1/4 cup) + sea or rock salt (~1 tablespoon) + water (~1/2 cup) + brown sugar (~1/3 to 1/2 cup). Mix well so the salt gets absorbed in to the liquid. Sample the mixture until it tastes sweet. Soak over night. I like to use apple wood but alder works fine too. Sturgeon is a mild fish so I'd stay away from the potent spices and other additives that people like to use for salmon. Just my 2 cents worth of opinion. Glad you're catching fish!
