Default Tonight's Dinner: Albie Enchiladas

I was feeling a bit latin-american tonight and decided to try something completely different with some of our recent catch of TUNA!....

Albacore Enchiladas!!!

Oh, my were these tasty!!! Here's the recipe I used:

Ingredients: 10 corn tortillas
1 large can sauce
1/2 cup mayonnaise
1/2 cup sour cream
1 small can green chilies
2 cups shredded cheese


I used four half-pint jars of canned tuna (for six people), flaked into in a bowl. Add 1/2 cup mayonnaise, 1/2 cup sour cream, 1 small can green chilies diced, 1 cup shredded Mexican cheese. Mix thoroughly.


Put 1/2 can (24 ounce) enchilada sauce in bottom of 9 x 13" pan. Put mixture into corn tortilla shells and roll up and place in pan.
Cover with the rest of the enchilada sauce and then cover with another cup of cheese. Bake in 350 degree oven for 25 minutes.


Top the enchiladas with a little Salsa Verde and serve.



This recipe is guaranteed to knock your socks off. Ummm Good!





I know it should have gone in the recipe forum - but since it's TUNA! maybe it can ride here for a bit.

OMG!

Great. Now I have to decide between TUNA! Pie , or Albie Enchilada's.

It's tough being, well,....me!

I'll post up a report on the enchilada's if I go that way. 90% chance on that, because I already LOVE the TUNA! Pie! Gotta try the new stuff, too. And Chromey said it's to die for. We'll see.....

Actually, I cheated and used red because that's what I had on hand. Where's the "YUM!" smiley when you need it?

Good stuff. I'll make it again.

I halved the recipe, added onions to the filling, and spiced up the filling with chili powder and garlic. The chili verde sauce (tomatillo based green salsa with Jaleps, onions, etc.) was a really good compliment to the dish.

Even at half the recipe, it was way too much for two adults. Leftovers will be yummy, however.

Gosh, I love TUNA!

those sound so goood!, we are taking some of this load of albi down to the bay area with us and are planning to do up some of these down there.
