Default Different recipes for canned tuna

I have done Jalapeno that is good. But it does take on a different taste after canning.
I have done Garlic that is good. Again takes on a different taste.
I have done Habenero. It is the best, hands down, most fabulos taste that retains habenero flavor.
I am trying fresh cracked pepper. It looks like I droped it in my driveway after canning. I can't wait to open a jar up tonight to try it.

Anyone else have a different recipe they use that they would like to share?

All canning procedures followed. Cook at 10 psi for 100 minutes and only add a 1/8 tespoon of salt. Then add other goodies. I still make alot of plain jars for my girls.

Try slamming the alder smoke to some . and then canning as usual .. I like a small dried red pepper and a clove of garlic in each jar but the smoke... Its the Bomb as far as I'm concerned .. Barney

I've canned with garlic, onions, habeneros, cajun, salt, and lemon juice. I've tried them all by themselves and in differerent combinations, but I always seem to go back to just the straight tuna with nothing added and doctor it up as need when I crack a jar.


I've heard great things about smoking the tuna before you can it. I think I will try it the next time I buy some or get a ride to the tuna grounds.

I ate my last jar yesterday and really need to stock the cupboards again.

I have to say smoked is the best. I smoked several big chunks and added a small chunk in each jar. I think it has plenty of smokey flavor.

Add an extra loin in the smoker and try it on the BBQ. About 2 to 3 minnutes on each side. EMM EMM GOOOD
