Homemade BBQ Sauce Receipes?
I sullenly admit to being somewhat BBQ challenged. I haven't been able to come up with a homemade BBQ sauce that is any more interesting than what is available at my local grocery. My pre-made faves are pretty much everything from the James Gang crowd, but....I would still like to fabricate my own sauces.
Does anybody have any receipes for a flavorful sauce that they would like to share? I'm not looking for just heat, but flavor. I want my family and guests to enjoy their meals, not leave the table with a cinder where their tongues used to be.

I too am a bit challenged in the area.
Lets try this:
Google: basic barbecue sauce recipe
Choose one of the 908,000 returns (I'll go with the first one)
From there I will choose; sweet, fruity or spicy or a combination.
Will it have Southern, South Western, Asian, Caribbean background? (or whatever)
I will make a "mother" batch of the basic sauce and then start concocting various small batches of the target sauce.
I like the idea of a spicy blend with fennel, coriander and Cayenne and other chillies.
I also would like to try a fruity Caribbean jerk style as well.
Then again..... A southern Bourbon based sauce would be nice.
It's all good.

So, your standard version is ketchup, honey or molasses, maybe some hot sauce &/or liquid smoke - basically.
I start with tomatoe sauce to avoid some of the sodium and sugar in the ketchup.
For a fruity twist on the sweet part, try an all-fruit spread or maybe fruit juice.
Find a hot sauce or ground pepper that you like (check the Mexican or Asian food section at Winco, they've got great variety).
Vinegar adds more tang, so can lemon or lime juice, or mustard.
Brown sugar, liquid smoke, soy sauce, worchestershire sauce, garlic, onions, whiskey, bourbon, wine, and beer are also good ingredients.
Obviously, you don't want to try all these at once, and I think it depends somewhat on the meat you'll be applying it to. If you want the sauce totally smooth, stick everything in the blender. If you like a little texture, use a food processor or just dice things. If the sauce is a little runny upon blending, cook it down some in a saucepan to thicken it up.
My mom always had a GREAT sauce for ribs, one cup each mustard, molasses, and cider vinegar. Put the sauce on the meat and then crack black pepper over it. It is SOOOOO good.

Also - A shot of Kikkoman; terryaki, fish, soy and hoisin sauce to the basic sauce sounds good. Fresh grated ginger and lemon zest and chili infused oil as well.

This our go-to sauce that is always good on pork:
Saute 1 chopped onion in 1/4 c. butter until translucent.
Add:
1.5 cups ketchup
1 cup broth or boullion (meat or chicken)
1/3 cup fresh lemon juice
1/4 cup worcestershire sauce
2 Tbsp vinegar
1 tsp celery seed or can use celery salt
1/4 tsp cayenne (more or less to taste)
1/4 cup brown sugar
Cook over low heat for 20 minutes, stirring frequently. Yum!

My step father has a chipotle (spelling? the stuff they put in salsa) BBQ sauce that is to die for best I've ever had. Can no longer eat grocery store brands. I will try to get the recipe and post it, "IF" he'll give it up. You may be able to find something similar on the web.

Heres one I found on the web:
- 2 cups ketchup
- 1/2 cup chopped onion
- 1/2 cup water
- 2 cans chipotle chiles (smoked jalapeno), chopped
- 1/4 cup brown sugar
- 2 tablespoons oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon worcestershire sauce
- 2 cloves garlic, minced
- 1/2 teaspoon celery salt
- 1/2 teaspoon black pepper
PREPARATION:
Heat oil in a sauce pan. Add onions and garlic. Saute until soft. Stir in brown sugar, celery salt and black pepper. Add remaining ingredients and simmer until the sauce thickens.

I like to experiment once in a while but right now I am in love with Sweet Baby Rays new Hickory and Brown Sugar BBQ sauce.......... I can drink it straight from the bottle.

Here is something a little different that we don't see much of in the N.W. but is big in South Carolina.
It can be traced back to German immigrates from the 18th century.
This sauce is for pork
INGREDIENTS:- 4 cups yellow mustard (two 20-ounce bottles of French's mustard should do the trick)
- 8 ounces of beer (less for thicker sauce, more for thinner sauce)
- ½ cup apple cider vinegar
- 8 Tablespoons brown sugar
- 1/2 cup tomato puree
- 2 teaspoon Worcestershire sauce
- 1 Tablespoon cayenne
- 1 Tablespoon fresh cracked black pepper
- 2 teaspoons salt
- 1 1/2 teaspoons garlic powder

Here it is... good on pork, chicken, and beef.
3 cups (24 oz bottle) catsup
1/3 cup balsamic vinegar
2 Tbsp red wine vinegar
1 Tbsp lemon juice
1 Tbsp Worcestershire sauce
Stir. Bring to simmer, not boil.
Stir In:
3/4 cup brown sugar
1 tsp salt
1 tsp coarse black pepper
1/2 tsp onion powder
1 tsp cayenne pepper
1 tsp paprika
1 tsp chili powder
1 tsp garlic powder
1/2 tsp dry mustard
1/2 tsp cumin
You may also add desired amounts of your favorite hot sauce to adjust heat and flavor.
Continue to simmer and stir occasionally for several minutes. Do not boil. Remove from heat and cover. Allow to cool enough to transfer to glass jar. Can store in refrigerator for 4-6 weeks.

Here's the best of the best after trying many homemade recipes:
2 cups ketchup
1 cup dark molasses
1/2 cup white vinegar
1 tsp chile powder
1 tsp paprika
1 tsp onion powder
1 tsp garlic powder
1/2 tsp ground allspice
1/2 tsp ground cinnamon
1/2 tsp ground mace
1/2 tsp ground black pepper
1/4 tsp Liquid Smoke (optional)
Combine all the ingrediants in a saucepan over low heat. As soon as the molasses dissolves, the sauce is ready to use. Can be stored in refrigerator for several days. Best used as a finishing sauce. Enjoy.:smile:

Here is a super easy one and yet delicious:
A mixture of 5 parts "KC Masterpiece Original Flavor Barbecue Sauce" to 1 part honey.
