Ground Bison
Well I bought 1 1/2 lb package of it last night and BBQ burgers from it. It tasted really really gamie{sp}, it was nasty. I don't think I will ever try it again. It reminded me of elk that wasn't taken care of very well in the field. Any of you try it and like it or dislike it?

Re: Ground Bison
Ya Mike. I would think they have real thick skin and hold the heat in real well and if not skinned pretty quick it would sour pretty fast. Thats the way this tasted.

Re: Ground Bison
Sorry that you had a bad experience fishboys. I've heard it's pretty tasty and Mike keeps threatening to bring over some of that roadkill of his so I can try it - but so far I'm a Bison virgin....

Re: Ground Bison
It usually tastes like well-aged, rich beef. Just a bit different than cow, but close. If it was gamey tasting, it wasn't a good quality product. Don't write it off just yet.

Re: Ground Bison
Bison are great meat! They taste better than beef because the bison feed on natural grass. Bison also are high in omega 3s!

Re: Ground Bison
Can't say I would rather eat Bison than elk, but I have not had any bad Bison. I would recommend it to anyone. Try again with using a different brand, or get the meat from a local rancher that sells at their location.

Re: Ground Bison
Hmmm, maybe it wasn't finished with grain, or not cared for right. I always enjoy bison. Freddies just had a sale. The price is going up.
Was it commercially raised and butchered?

Re: Ground Bison
I got some at Fred's as well, but mine was excellent. Every bit as good as my moose burger (which is just a bit better than elk).

Re: Ground Bison
I guess I should say I didnt care for it, and I feel maybe it was a bad batch of burger, I in no way ment to offend anyone who likes it loves it or anything else. I love elk deer pig oysters raw or cooked chicken hearts liver and almost anything else you can think of,{ I do draw the line with milt sacks though} Now that you have said its good it kinda makes me think even more so that I just got a bad package. That's kinda why I made this post.

Re: Ground Bison
I think you got a bad package too. Bison tends to be richer in flavor but nothing close to what I'd call gamey. I personally don't care for venison for that reason. I've had really really GOOD bison and if I got what you're describing I'd know it was "off".
That said... a guy I worked with for a short time was a long time butcher. He told me it was not uncommon to take larger cuts that were expiring, trim them up a bit, put them through the grinder and sell them as burger withg a new pull date. Think about that practice for a minute and it's not hard to see how you could end up with a package of burger that was on the downhill side of fresh.

Re: Ground Bison
Next time you get a chance to drive thru Gaston, pull in to Cooper D's and try one of their Buffalo Burgers - it's to die for! Sounds so good, I'm going to take the kids over there this weekend...... don't give up on it. If you try it again at home, try mixing about 1/4 ground pork to 3/4 ground bison.... try it, you'll like it! zip
