Well here's the update. The Vector X3 was the right motor for my boat for sure. 4.5 hours of mid throttle and batteries were still showing 3/4 full.
Outcome:
9 fish for 3 poles. I fished, but my Dad and my boy did the catching.

I think I caught one of those fish. Three fish were 12". The rest, not so much.
Rigging:
Combination of smaller Ford Fenders, Cow Bells, and some kind of leaf unit. All pretty much the same kind of setup. Also, a few ounces of teardrop hanging from the rudder. Followed by 24"-36" leader, and a red or green wedding ring, and a chunk of wiggle meat (night crawler). We tried some various spinners, and other shiny wiggly items, as well as cheese flavored marshmellows. No bites on any of those!
Tour:
We stayed pretty much up near the spillway, just going back and forth at 1.4-1.6 MPH (GPS). Any slower and they were not interested, any faster and they had a hard time slamming it. The Zig Zag pattern was thrown in by default (a bit of wind). I swear my boat is a kite, even with the top down. The winshield catches the wind and acts like a sail.
After calling it a day, we shot over to Boat ramp C along the finger with the park and covered Pavilion structure. Fish finder showed lots of fish in that area about 75 ft from the bank, 15-20 feet down.
