Back when I was 20ish and single, I lived off of Lean Cuisine's Fish Florentine.
I LOVED that stuff! I used to just gorge on it. They don't make it anymore.
I'd love to know how to make it. I bet it's easy, but I want it to taste like theirs!
I've tried several recipes, and they are all good, but none of them are THE ONE!
I tried this, tonight. I'll let you know how it goes.
FISH FILLETS FLORENTINE
1 lb. fresh spinach
1 1/2 lb. fillets (flounder, whiting)
3 tbsp. lemon juice
Salt and pepper to taste
1/2 c. water
1/2 c. milk
2 tbsp. instant blending flour
1 tbsp. parsley, minced
Pinch of nutmeg
6 tbsp. grated Parmesan cheese
Wash and trim spinach and place in pan. Cover and cook 2-3 minutes. Drain well. Arrange fish in single layer in baking dish. Sprinkle with lemon juice, salt and pepper, and water. Cover with foil and bake at 350 degrees for 5-7 minutes. Drain liquid into a saucepan and heat to a boil.
Combine milk and flour and stir into liquid. Cook, stirring constantly until it thickens. Stir in parsley, nutmeg and season to taste. Arrange fish in center of a baking pan; surround with spinach. Pour sauce over all and sprinkle with cheese. Run under broiler until bubbly. Serves 6.
Of course, for dessert you have to have cantaloupe with ice cream in the middle. That was another staple I lived on.
That, and baked potatoes with nothing but Nancy's cottage cheese.
I had to stay slender, don't cha know?
These days it seems like I can eat whatever I want, and I stay skinny! Lucky, I guess? I don't know!
Oh yeah-- Neat trick to get all the liquid out of your spinach: Press it in between two salad plates. Voila! It works!
