Default Need some Spring Chinook recipes

Hey I just happened onto 23#'s of springer today and wanted to see if you guys can suggest some good recipes, that's a lot of meat to cook up!!!!! RW

First off, NOT FAIR! I want some.

Now that pleasantries are out of the way. The absolute best way I've ever had fish is on bob's board. Olympic Salmon Steaks. http://www.piscatorialpursuits.com/food.htm The only thing I change is I put them in a rack and barbeque them instead of broiling, and while bbqing I continue to brush on the marinade. This recipe is soo good it makes the hair on the back of your neck tingle. Just ask rippenlips. And the belly meat, ohhhhh the belly meat, so nice and oily mmmmmmmmm, springer rules the world.

Now I just have to get to the river and catch some.

I,ve got one for you that I have done for years and is a favorite of our family (even those who don't really care for fish, can you amagine). If you are feeding a large group this one is perfect.

Cut a section roast out of the main body of the fish, about 8 to 12 inches long.

Lay down a large doubled piece of aluminum foil on the counter large enough to wrap the entire roast.

Lay strips of bacon end to end on foil in a manner that will cover the entire roast when wrapped in the foil.

Fill the body cavity of the roast with sour cream (mix in seasonings to your taste, I typically use some garlic powder and lemon pepper).

Cut a whole onion (skinned) into wedges and push into sour cream.

Cut a whole lemon in quarters, push two quarters into sour cream. Squeeze the lemon juice from the other two quarters all over roast and then push them into sour cream as well.

Wrap entire roast in foil and bake in a shollow baking dish at 350 for about an hour (time will vary depending on size of roast). I usually cook mine on the BBQ, the time is about the same you do have to flip it obout half way through cooking time and check for doneness.

This is a great way to eat up a large portion of some great fish.............enjoy, it's YUUUUUUUUMMYYYYYYY.

Want a recipe that will knock your socks off?1 cup brown sugar
1 cup teriyaki (Mr. Yoshidas)
1 cup Jack Daniels Black Label (no cheating with cheap substitutes)
Lay whole filet meat down on grill 1 minute to sear.
Turn back onto skin on foil with edges rolled up to form reservoir. As the meat cooks slowly spoon on the combined mixture.
Preheating the mixture helps combine the three ingredients. As the salmon cooks the mixture carmelizes and works into the meat.
Trust me it can't be beat.
Drink the remainder of the Jack while you wait!

Take some fillets and roll them in corn meal. Season with garlic powder, salt and pepper then place on a not real hot b-b-q grill and baste with fresh lemon juice as they broil. Good quality briquets and a little smoking chips for flavor... apple or alder is my choice. Not fancy but a great simple fish b-b-q with the finest chinooks around. Good job RW!!!!!!!!!

My favorite way to have springer fish.

Cut fish into steaks about 1 inch thick, (dont add any seasonings at this time) Place individual steaks into ziplock bags. When this is completed email my address and I will pick up the steaks. I will season and cook the fish and let you know how the steaks were.

First, save the belly meat for the smoker.

With the first few fresh springers of the year, I typically dont flavor too much. BBQ with some alder or vine maple chips. Later, I will take a section of the raost left over from the fillet after smoking bht belly meat and cut this into 0.5 inch thick strips. Cut the skin off, marinade in treeikee for about 5 min and then broil for 3 min on one side and 2 min on the other. O god, it's so good...

RW I screwed up on the recipe I posted to you. Do not use corn meal for the bbq do that when pan frying. Looks like your guide friend knows how to catch them. Or you do anyway Maybe thats what I need to get a willamette springer... fished for them for about 20 seasons without a bite yet.(limited trips)

mY FAVORITE IS TO MIX EQUAL PARTS OLIVE OIL AND SOY SAUCE ADD A GOOD SQUIRT OF LEMON AND ADD GROUND CUMIN AND DILL WEED MIX IT ALL TOGETHER AND BASTE IT OVER THE SALMON THEN GRILL, POUR EXTRA OVER SALMON AND ADD SOME WOOD CHIPS TO GRILL TO GIVE THE FISH A SMOKEY FLAVOR BELIEVE ME YOU'LL LOVE THE TASTE, NOW WHERE'D YOU GET THAT SALMON......
