Default Crock Pot Meals

Do you have a favorite meal? Any recipies that are a must? I am hungry.

Here is a great winter meal recipe taught me by a crazy New York Italian. It is not a "crock pot" but can be prepared in 30 minutes and is great winter fare.

Ingredients:

Hot Italian Sausage - one package
Yukon Gold potatoes - 3-4 medium
A LARGE sweet onion
A red bell pepper (or yellow or both)
A small Zucchini
Garlic to taste
Any other vegetables that you like (mushrooms, yellow squash, etc.)
A fresh loaf of French bread
Shredded Mozzarella

Cut the potatoes into chunks and boil in a sauce pan - set aside.

Cut the hot Italian sausage into one inch pieces and brown them in your largest frying pan, discard excess grease (leave two or three tablespoons). Add garlic after browning so it does not burn (I give it a little heat before adding the rest of the veggies).

Julian all the vegetables. The onion, just slice in rings then cut through one side so they are long broken rings. Everything else, just cut so it comes out long like noodles.

Now add the potatoes and all the veggies to the sausage in the big frying pan, add 4-5 tablespoons of water. Season to taste with salt, pepper, Cayenne pepper, Italian seasoning, etc. Cover and reduce heat to med-low. Steam for 12-15 minutes, until the veggies are wilted and tender. While it is cooking...

Grab your French loaf and cut it lengthwise. Now removed the top and hollow out the bottom, leaving a half to 3/4 inch of bread and crust. Do the same to the top. You can set aside the extra bread chunks for dressing if you just can't throw away fresh bread.

Now it all comes together: Put the bottom of your bread on a serving tray. Now fill with the sausage/veggie mix and cover with way too much shredded mozzarella cheese and put the top on. Do this quick while the filling is very hot and the cheese will melt down through the sausage and veggies. Allow a few minutes melt time, then cut into individual portions and plate (at the table works well).

A variation is to just heap the filling on a plate and cover with mozzarella, eat the French bread toasted on the side. It is less messy but lacks the presentation value.

Try this once and it will become a year round staple. It really is good.

Easy and cheap

Coca cola Ham

Put a ham in the crock pot with the bone in and fill the crock pot up with coke. turn on and leave it all day.

When you are ready take the bone out most of the meat will fall off and it is an easy deal.

Venison Stew

Cubed Venison (2lbs or so)
Potatos
Onions
carrots
Corn
What ever else you want to add
2pks of brown gravy (more if you have a large pot)
1pk stew seasoning (see above)
Mix the meat with the seasoning in the pot before you add anything else
Add the rest of the stuff and then add water to fill the space left.
Cook for 8 hrs or so. Add some flour at the end of cooking if you like it thicker.

The old crock pot is a amazing thing, I don't think you can make anything that is not good.

My wife does not use it alot, but she will do a pantry "free up space" freezer "free up space"........thing.

She will put just a bunch of stuff in the old crock pot cook it all day, steam some rice and BAM ! It's done, and it's always good.

Got it going right now! Pork shoulder roast- rubbed in Johnny sesoning an minced garlic, lot's of it, 1 cup chicken broth and 1 cup of coffee. cook for 12-16hrs on low- oh yea baby!

One of my favorites is Riverliver's Carnitas. MMMM!

My favorite SIMPLE (takes no time at all) recipe -

Chicken or turkey. Throw it in the crockpot, sprinkle on some granulated garlic, onion, oregano, white pepper and a little of your favorite hot sauce (or any seasonings you see fit), slam the lid on, set the dial for low, and let 'er rip for a day.

Do NOT add water - the bird and condensation will create it's own juice. It will be the MOST succulent fowl you've ever had. I promise. This is how I cook my Thanksgiving turkey (about a 9.5 lb bird in a 5 qt oval crock). Start it late the night before and by mid-day it's ready to hit the plate.

LOTS of drippings for gravy makin'... and this is where your seasonings will really come into play. Most of the time, I reserve the broth for making pot-pie or chicken 'n dumplings later on...

I like to cook whole chikens in the crock pot. Take a whole chicken and add 1 can chicken broth and your favorite veggies. Cook on low all day. Meat if tender and falls right off the bone. Make great chicken sandwiches the next day.

My favorite meal in the crock pot has to be chuck roast.

One 2.5 pound chuck roast cut in 2 in. chunks (with some fat trimmed)
3 cloves of garlic smashed
2 onions chopped large
1 stalk celery chopped large
black pepper
(NO SALT)
cover with water

Cook on low for 6 to 8 hours
Shred meat with your hands or two forks and add BBQ sauce OR taco sauce OR make gravy with juices.
Salt afterwards to avoid the meat getting stringy and dry tasting. The cool thing about this beef is you can have some on BBQ beef sandwiches today, shredded beef tacos tomorrow and then make some gravy to put over noodles the next day.

I can't imagine wasting perfectly good Coke . Maybe Pepsi, RC, or a store brand cola would also work?

good fat ,cheap pork roast (shoulder). cover with water, two good tbs liquid smoke, palm full kosher salt, cook all day, serve with rice. play with the quanities. you cant't beat it.

Whole chicken, rub with salt and pepper, add a little water and cook all day. Hard to get out of the crock pot without falling apart but very tasty and easy to do.

Pork Chops.
Brown & season in skillet. Put it in the C P with mushrooms, diced onion, minced garlic, 2 cans cream of mushroom soup. Let it go all day. Serve over rice or with potatoes. mmmmmmm

sweet and sour chicken denny style... boneless chicken thighs, put in CP with 1 cup chick. broth and any aromatics- onion- garlic- green peppers-red peppers-carrots- celery-hot peppers or sauce- what ever your taste buds call for. cook on medium heat till chicken is done. Add contadina canned sweet and sour sauce heat on low till hot throughout- add fresh herbs- oregano-basil-etc. serve over steamed rice.... invite friends..... All dance!

Marinate overnight, a well-trimmed pork shoulder ("picnic" roast) in a heavy duty zip-lok bag using inexpensive red wine (like cabernet sauvignon) along with minced garlic, minced red onion and lemon pepper. When finished with marinade process, drizzle extra-virgin olive oil into the the bottom of the crock pot, then place the meat into crock fat side up. Cover generously with Italian seasoning, cover and cook on medium about 10-12 hours. Bon Appetit!

Well I will buy a bigger crock pot and give this a try.
