As Thanksgiving and Christmas draw near, I will be making a traditional treat that has been in my family for quite a while. The recipe was written down by my great grandmother, I'm not sure how long it was around before that.
Great Grandma's Potato Candy
You will need:
2 peeled, small to medium sized, well diced potatoes (any kind will work but I prefer red)
2-3 lbs of powdered sugar
2 tsp vanilla
Creamy peanut butter
Water
Slice potatoes into small pieces as if you were making mashed potatoes. Place sliced potatoes in a small sauce pan and add water until potatoes are covered. Boil until potatoes are reduced to stock. (It will look like you have mashed potato soup.) Make sure to whisk out any chunks so that they are nice and creamy, then reduce heat to a low simmer.
Pour powdered sugar into a large mixing bowl. Add vanilla, but don't worry about mixing yet. Add a portion of the potato water to the powdered sugar, mixing while you add. You want to add enough of the liquid to make a dough-like consistency. If you add too much liquid just mix in more of the powdered sugar- That's what the other pound is for! You most likely will not use all of the potato liquid.
After you have made your potato-sugar dough divide it into a few baseball sized balls. Place a ball onto a sheet of waxed paper and roll with a rolling pin until about 1/8” thick. For best results you'll want to try to make the sheets rectangular. It also helps quite a bit to coat the waxed paper and rolling pin with non-stick cooking spray. After you have your rectangular sheet of dough, evenly spread peanut butter over the entire rectangle. Then roll like a jelly roll, making sure to wrap the waxed paper around the roll when you are done. After you have rolled the candy put it into the fridge to chill for a few hours. Remove from fridge and slice to whatever thickness you prefer. It is best to slice the entire roll and put the pieces in a tupperware container in the fridge to prevent it from drying out.
