Default making pepperoni

I'm looking into making my own pepperoni sticks.
Does anyone out there make their own?
What equipment is needed to do it right?

Check with LEM Products, Inc. They have all the resources you'd need - books, spices, equipment, step-by-step, etc.

We make our own every year. There is a place in Clackamas. Northwest Butcher's Supply that has all the spices, casings,knives, etc. You're gonna need a grinder and a stuffer and a smoke house or???. There is a book by Rytek Kutas that is refered to as the "sausage bible". It's title is "Great Sausage Recipes and Meat Curing" available through the Sausage Maker. So one of those mixers is not necessary?
This is how I understood the process (and please correct me if I'm wrong)

1. grind the meat and extra fat as needed
2. throw both in a mixer with the seasonings, mix well
3. run it thru the stuffer into the casings
4. hang in a smoker until done ( I hope a little chief will work for that.

that all sounds good and if you need someone to help you "taste" then let me know. I am now in the process of "brewing" my own Cider... It is clearing now and should be ready in a month or two... we can sample together...

Northwest butcher supply or Clark Supply are both in Clackamas and can help you out with everything you need. Just be sure to use cure/prague powder with your seasoning. You wouldn't want to make anyone

Hi, Sounds like your on the right track, do a search for this guy. Len Poli, Sonoma, California he has a non comercial free site with lots of recipe's and information. I have emailed him a couple of times and he allways gets back in a few days.

I've made quite a bit of salami,pepperoni, brats,etc.and get my stuff from a place called PS Seasoning and Spice.Website is www.psseasoning.com.
