I use rock salt in the brine to help firm them up. If I'm at the coast, I'll use sea water and a little less rock salt. Some people add laundry bluing to their brine to help them shine a little better. I've done it that way too, but most of the time I don't.

When I plug cut my herring, I leave the guts and heads in the brine for added scent. It makes the water dirty and nasty looking, but I don't think it dulls the shine of the herring.

Add some powdered milk to get them to shine nice and bright. I usually add river water + rock or sea salt + powdered milk + scent (pure anise oil, shrimp oil, squid oil, anchovie oil, or a combo of some or all of the oils). Experiment until you find what works best for you. Hope this helps.

I have heard that people will take the frozen herring and cure them in something that makes them a lot more firm and brings out the color. What is that?
