I use rock salt in the brine to help firm them up. If I'm at the coast, I'll use sea water and a little less rock salt. Some people add laundry bluing to their brine to help them shine a little better. I've done it that way too, but most of the time I don't.
When I plug cut my herring, I leave the guts and heads in the brine for added scent. It makes the water dirty and nasty looking, but I don't think it dulls the shine of the herring.
