Default 2nd Annual Virtual BBQ Contest - WINNER !!!!!!

[b]Fire up the smokers and grills it's time for the 2nd annual IFISH virtual BBQ Contest.

Tomorrows the 4th of July and anybody who is anybody will be putting their favorite meal on the pit.

Check out this butt from Friday night .....


This year virtual BBQ contest will be for the "Virtual" trophy that Adofish won last year.
Along with the trophy you will win a virtual Klose BBQ pit from the Klose family in Houston Texas, A virtual years supply of Stubbs BBQ sauce and a virtual $1,000,000.. But most important you get to be King of the Q on IFISH.

In case you missed it from a few weeks back let this help motivate your efforts.

I present you with "I Believe In BBQ"


I believe in barbecue. As soul food and comfort food and health food, as a cuisine of both solace and celebration. When I'm feeling good, I want barbecue. And when I'm feeling bad, I just want barbecue more. I believe in barbecue in all its regional derivations, in its ethnic translations, in forms that range from white-tablecloth presentations of cunningly sauced costillas, to Chinese take-out spareribs that stain your fingers red, to the most authentic product of the tarpaper rib shacks of the Deep South. I believe that like sunshine and great sex, no day is bad that has barbecue in it.

I believe in the art of generations of pit men working in relative obscurity to keep alive the craft of slow smoking as it's been practiced for as long as there's been fire. A barbecue cook must have an intimate understanding of his work: the physics of fire and convection, the hard science of meat and heat and smoke -- and then forget it all to achieve a sort of gut-level, Zen instinct for the process.

I believe that barbecue drives culture, not the other way around. Some of the first blows struck for equality and civil rights in the Deep South were made not in the courtrooms or schools or on buses, but in the barbecue shacks. There were dining rooms, backyards and roadhouse juke joints in the South that were integrated long before any other public places.

I believe that good barbecue requires no decor, and that the best barbecue exists despite its trappings. Paper plates are okay in a barbecue joint. And paper napkins. And plastic silverware. And I believe that any place with a menu longer than can fit on a single page -- or better yet, just a chalkboard -- is coming dangerously close to putting on airs.

I believe that good barbecue needs sides the way good blues need rhythm, and that there is only one rule: Serve whatever you like, but whatever you serve, make it fresh. Have someone's mama in the back doing the "taters" and hush puppies and sweet tea, because Mama will know what she's doing -- or at least know better than some assembly-line worker bagging up powdered mashed potatoes by the ton.

I believe that proper barbecue ought to come in significant portions. Skinny people can eat barbecue, and do, but the kitchen should cook for a fat man who hasn't eaten since breakfast. My leftovers should last for days.

I believe that if you don't get sauce under your nails when you're eating, you're doing it wrong. I believe that if you don't ruin your shirt, you're not trying hard enough.

I believe -- I know -- there is no such thing as too much barbecue. Good, bad or in-between, old-fashioned pit-smoked or high-tech and modern; it doesn't matter. Existing without gimmickry, without the infernal swindles and capering of so much of contemporary cuisine, barbecue is truth; it is history and home, and the only thing I don't believe is that I'll ever get enough.

Did a slather and rub on a butt earlier today. It is hitting the Traeger bright and early in the morning. I'll post pictures.

For a virtual Klose pit, I would tend a virtual fire on one of those sweet pits. They are the bomb. I am in envy when I see them at the BBQ competitions.

I really like the Traeger, but I think I put out some really good "Q" on the old Brinkman using lump charcoal and wood chunks before we upgraded. It doesn't take fancy equipment. Definately food of love.

I would be grateful with the 1,000,000 and the stubbs, its just a thought. :grin:

Pork butt has been on since 4:00 AM and chicken went on around 2:00 PM.

Everything should be ready around 7:00PM.

I'm ready for a coldy

After getting less votes than someone who threw Top Romen on a grill vs. my Elk Roast, then getting fewer votes on my boot story than someone's dog wearing boots - I decided to not get to worked up or bother sharing pics this year. Fresh Tuna Loin with Lemon and Fresh Tuna Loin Kabobs (not sure how that will work). Oh and did I mention the fresh Tuna Sashimi on the side. Everyone enjoy you holiday and BBQs.

Not an untruth just a change of plans Long story "BUTT" a few neighbors were having a great time out on the deck last night and one thing led to another. Needless to say we were running around town at 10PM looking for a pork butt Gave it a good rub and got 4 hours sleep. Did get a little this afternoon.

And besides we all know a cheap cut of meat like the butt section of an old hog can't stand up to the premium baby backs your cooking. :grin:

We had our BBQ feast yesterday since Mama has to work early today. (Night Shift).

Smoked dry-rubbed BabyBacks for 90 minutes, wrapped in foil with apple juice for another 90 minutes, tossed on the grill and BBQ sauced for another 15 or so.

Served up with some King Crab Legs and butter, (Didn't I see those legs on the Discovery Channel?)
"Riverside BBQ" Potato's au gratin,
And Corn on the cob.

Here we go with my entry. Did not get a picture of the final presentation on the bun, so I may lose points there. Got lazy on the pictures once the guests showed up. Traded the camera for a barley pop.

The butt turned out wonderful. Nice and juicy. We had Carolina style vinegar sauce and some sweet western style dipping sauce. Slap some pulled pork on a bun with your favorite sauce, some salad, and your favorite beverage was all anyone needed.

One pork butt with rub from the night before. Gave it a special injection before I put it on the smoker. A mixture of apple juice and spices.



Traeger time.



About half way there using a mixture of hickory and apple.



10-1/2 hours later and 196 degree internal temperature. Time to let it rest for about 45 minutes before pulling.



The leftovers. I can't wait until tomorrow. Hope it is as good as the first time around.

Sorry didn't mean to rub anything in, all the entrties sound so good, my wife would die to be at any of those tables - they are the BBQ hounds of the family.

As far as beer you bet Steve, it will probably have to be after Racquetball like 7-7:30 if that is ok with you.

Oh on the experimental note the tuna loin Kabobs - were all raves. 2 hours in Teriyaki, sharing space on the stick with zuchinni (seeds removed) and red bell peppers 2 minutes low heat, turn 2 minutes low heat - pull

Next time I think I should blanch the veggies first since the cooking time is so short.

oh it was too good - it almost made me forget 120+ miles on the ocean yesterday. Ok back to the ibuprophan bottle

Also did a bunch of chicken and sauasage for my non pork eating friends.


And as my entry here is the final result. BBQ is the simplest form of gourmet cooking.


And a special thanks to my buddy and BBQ mentor Jimmy Jackson who has taught me so much about manning the pit

Well with only three entries this time around I'm going to exercise my right as the acting Virtual BBQ Commisioner of IFISH to name a winner.

Lack of entries is my fault due to the fact we got a late start letting everybody know we were going to do it again.

So with no further ado......

I made a gallant effort yesterday and was able to whip up a little southern magic of butt, sauage and thighs.

brshooter Q'd an awesome looking butt. If your looked up Pork Butt in the encyclopedia his is a very good example of how it should look. I can tell it tasted just as good.

But, I am taking executive privledge and naming RODACTION as the July 4th 2006 IFISH King of Q.
The food looked great, presentation fantastic and all the side orders were what BBQ sides should be.

I now present you with.....

A years supply of Stubbs BBQ sauce


1 Million virtual dollars


And a custom made Klose Bros. BBQ Pit

Maybe we'll try it again for Labor Day.

Well pearl entry was also some very good looking classic BBQ, the pulled pork with cabbage atop a bun was making me want a bite......with a little "kicked up a notch" sauce I think every entry was great, so to my fellow contestants, if you need and stubbs BBQ sauce or need to "barrow" some $$$$ :grin: let me know. (I have plenty now.)
