Default Boat for the Gulf

If you were going to be buying a boat (lets stay under $75k) for fishing in the Gulf of Mexico out of TX / LA, what would you have? I am thinking for myself something in the 24' to 29' range and not a center console. Would you go with twin outboards, a single outboard, or a I/O? Monohull or Cat?

Opinions welcome!

Single diesel inboard or diesel I/O volvo dou prop.

My Brother inlaw has a 24ft Bayliner. Walk around. Not sure of exact model. Takes it out in the Gulf out of Port Aransas sometimes Corpus Christie. Often on 1-2 nighters. Alot of times past the oil rigs. Many times 3 hours out. Been with him several times very safe comfortable Boat. Been in some pretty big storms. Chevy 350 inboard. Navigation,GPS, Radio, yada yada yada. Excellent Boat. Tons of room. Sleeps 6-8 people. An alternator here and there a few batteries. A few Starters, And the usual "sea life" maintenance. Head gaskets a couple years back. All else is very stand up. I will be there the first week of May. Of course out in the Bay. I'll Post a pic or two if you'd like.
Didnt break the bank either. I'm thinking around 45k ?

I've read the Gulf can get pretty choppy so a cat or deep V would be a good choice. Powering it is a personal preference. Big difference between a 24' and a 29' too. Anything over 28'+ I prefer twin inboard. Less than 28' either twin outboards or single I/O.
