Default Where's Radke?

Radke,
If your still around I just wanted to let you know I printed your recipe off this site for the Salmon Manicotti that you raved about. Made it the other day and it was outstanding! My 8yr old Daughter could'nt get enough of it. I made a double batch and we devoured it that night.
I hope you see this.

Well, thanks for the compliment. Wish I could say I created the receipe, but all I did was buy the cook book, and modify the receipe slightly. This really is a good dish.

10 manicotti shells, cooked according to the package directions
2 cups cooked flaked salmon (you can cook it any way you want, poach, oven, barbeque)
1 cup grated cheddar cheese
1 cup grated mozzarella cheese
1 tsp. lemon juice
6 tbs. sour cream
1 cup chopped onion
jar of marinara or spagettie sause

in large bowl, mix all ingredients except the manicotti shells (of course) and marinara sauce.
stuff shells with mixed ingredients and put in baking pan
cover with marinara sause,
bake 350 degrees for 20 minutes.

For a more appealing visual, you can sprinkle a bit more cheese over the sauce before baking, gives a pizza like look. This is one recipe that people have raved about, recommend it highly.
