Another good duck/goose meal. Gotta try this one

Well I ran out of BBq gas so my usual recipe was out of the question so I did some hunting around and found this. It was very good and I thought you guys mite like it also.

Breast out ducks or geese and debone
thin slice (3/8") the meat and cut into medallions
make 1 quart 50% water/vinegar solution in a glass mixing bowl
add 1 quart strong citrus juice (grapefruit, or orange are our favorites)
cover with plastic wrap and marinate several hours in the fridge
fry bacon till crisp, remove bacon and crumble
add onion,shrooms and whetever else you like to hot bacon grease then add the medallions.
cook about a minute on each side,maybe less.
salt and pepper to taste

serve with wild rice, red potatoes and your best batch of home brew.

Wife - "Why do you need to brew so much?"
Me - "So I have something to with all the ducks I shoot"
Wife - "Well, why do you have to duck hunt so much"
Me - "Well, it's so I have something to go with all the home brew"
Wife - <gives up, shakes head, walks away>
