Mom's rhubarb custard pie

Pastry shell:

3 cups flour
2 tbls sugar
1/2 tsp salt
1 cup cold shortening

Using a pastry cutter, mix until crumbly.
Beat 1 egg in a seperate bowl.
1 tbls white vinegar
8 tbls cold water, may need to adjust based on humidity. Probably 6 if
you're in the valley.

Mix well

Make a hole in the middle of the pastry mix, then add above
until mixed well, with hand or fork.

Form into 2 balls, roll 1 ball out with a rolling pin, and place in
pie dish, glass or metal.

2nd one, roll out, cut into 3/4" strips for a basketweave top.

Or use your own pastry shell.

Fixins:

Beat 3 eggs
Add 3 tbls milk
Mix & stir
2 cups sugar
1/4 cup flour
1/4 tsp nutmeg

Mix in 4 cups cut rhubarb

Pour into the pastry shell, dot with 1 tbls butter

Cover with the strips of pastry, lattice style (basketweave)

Glass pie plate, cook at 375.
Metal pie plate, cook at 400.

50-60 minutes.
