Smoking trout on a Traeger
I have some nice Diamond Lake rainbows I'd like to smoke on my Traeger, but I have only smoked trout using the Lil Chief and the Bradley. I have a wet brine solution I like, and know to allow the chunks to dry to a tacky state after removal from brine before smoking. My main question is how long to smoke the chunks in my Lil Tex with the three-setting heat control on smoke. Three hours, as per the Traeger smoked salmon recupe? Or will the Lil Tex on smoke be too hot to do a good job?
