I went to Lewiston over Thanksgiving the after a long day on the boat tring to catch a Steelhead my wife and I decided to take the Kids out for dinner. The Restraunt we went to had Salmon Bisk for the soup of the Day. Has anyone heard of salmon bisk is so do you have a recipe you can share.

Salmon Bisque

1 tb minced onion
6 tb melted butter or margarine
5 tb flour
1 3/4 cup chicken broth
1/2 c dry white wine
1 tb tomato paste
1 cn (7.75 oz) pink salmon
undrained
1 c half and half
1 salt to taste
1 peper to taste
1 croutons (optional)

Saut. onion in butter in a saucpan for about 5 minutes or until onion is transparent. Blend in flour. stirring constantly.
Add bay leaf. Gradually stir in broth. Cook stirring constantly, until thick and smooth. Stir wine into sauce and cook over low heat for 10 minutes. Discoard bay leaf. Add tomato paste and salmon. Blend until smooth. Return to sauscepan and add Half and Half. Season with salt and pepper. Heat and serve. Garnish with croutons. if desired. yields 4 servings. (Notice Bisk is spelled bisque)

2nd Salmon Bisque recipe

1 stick butter
2 large onions, chopped
2 sticks celery and leaves chopped
1/2 green pepper, chopped shrimp (optional)
2 tbsp flour
1 can whole tomatoes
2 c. cream (half and Half)
1 can pink salmon
parsley
green onions
salt and pepper to taste

In saucepan add butter, onions, celery and leaves and green pepper. Cook until limp. Add flour; mix well. Add tomatoes, let simmer for 20 to 30 minutes. Add salmon that has been deboned and drained. Add cream and simmer. Do not let boil. Simmer for about 30 minutes. Add shrimp to bisque 10 minutes before serving. Add parsley and green onions. Serve over rice.
