Ok, it's that time of year. Lets put our favorite Christmas recipes out there for us all to enjoy. Doesn't matter what it is, if you like it maybe we will also. I have a couple in mind but i am at work and will have to post later.

For those of you with a sweet tooth. This one takes a little skill in the kitchen but here it goes :dance:

INGREDIENTS:
1 1/2 cups butter
2 pounds confectioners' sugar
1 (14 ounce) package flaked coconut
1 cup chopped walnuts (optional)
1 (14 ounce) can sweetened condensed milk
3 cups semi-sweet chocolate chips
3 tablespoons shortening

DIRECTIONS:
Cream together butter, powdered sugar and coconut. Stir walnuts and condensed milk into the mixture. Roll into 1 inch balls and arrange on waxed paper covered cookie sheets. Refrigerate for at least 2 hours.
Melt chocolate chips and shortening top of double boiler over medium-low heat. Working in small batches, dip balls in chocolate until covered. Place on waxed paper covered cookie sheets and refrigerate. When firm, store covered in refrigerator.

Marinated Cualiflower Fritters. These are a great snack for watching the bowl games. You can marinate them ahead of time and deep fry them when you're ready!

1 small head cauliflower
Water, salted
1 cup red-wine-vinegar-and-oil salad dressing
1 cup flour
1 teaspoon baking powder
1/3 teaspoon salt
1 egg, slightly beaten
3/4 cup milk
Grated Parmesan cheese
Oil or shortening for deep frying

Break cauliflower into flowerets. Cook in salted water until done but firm, about 8 minutes. Drain. In medium bowl, pour dressing over cooked cauliflower. Marinate at least 1 hour, a little longer is better. Drain thoroughly.
In small bowl, combine flour, baking powder and salt. Stir in egg and milk. Mix until almost smooth. Dip drained cauliflower into batter and then hot oil or shortening (375- 400 degrees F.) in the mini-fryer and fry until golden brown. Drain and sprinkle with lots of Parmesan cheese. Serve piping hot!

Serves 3-4, but you'll want extra. I like a dash of Tobasco sauce on them after they're cooked!
