Since it's prime time for fresh oysters here in the N.W; I have a recipe that's easy, fast, and really good. You cook it in the microwave, and it's done in 15 minutes! :food:

3/4 cup dry seasoned bread crumbs
1/3 cup melted butter
1 pint fresh oysters, drained (but save the liquid)
1/2 tsp. salt
1/2 tsp. pepper, or to taste
1/2 tsp. Worcestershire sauce
1/3 cup finely diced celery
1 finely minced scallion
2 Tbsp. frsh minced parsley
1 cup liquid, half oyster liquor and half cream

Combine bread crumbs and butter, spread 1/3 of mixture in two qt. glass casserole. Layer oysters over crumbs. Combine salt, pepper, Worcestershire sauce, celery, parsley and liquid; pour over crumbs. Top with leftover crumb mixture; sprinkle with scallion. Microwave (high) 10 minutes. Rest 5 minutes. :smile:

What would work best? Mediums or smalls?

be sure to poke stomachs/bodies with a fork!!! you may be cleaning you micro of a heck of a mess otherwise.

Either will work fine F.W; the main thing is to use the same size so they cook evenly. I personnally pan fry the big ones and scallop the smaller ones.

Of course like anything else cooked in a microwave oven that comes to a boil, it should be covered. I use some Crocker-Ware with glass covers. Works great! :food:
