I have a 20ft w/ offshore bracket. If I slowly increase the throttle, just before planing, I get water shooting up the sides of the main motor. Not a huge amount, but enough to get the motor wet. Then, when Im on plane, it stops. Ist this a motor height thing? I noticed that there is one more hole left (to drop height)

Doesn't sound too bad but, if anything, you are too low and need to raise the engine up a notch not down.

Because you have the offshore bracket the normal alignment for the anti-ventilation plate is not the same as a transom mounted engine. A transom mounted engine needs to be within 1-2 inches of the bottom of the hull. I have an offshore bracket and my AV plate is about 4 to 5 inches higher than the bottom of the hull at the transom. If I lower my engine one notch, I get a huge "V" of water (even when on plane) and look like a jet ski going down the river.

I would raise it a notch and see what happens. If it doesn't cause huge ventilation problems, you will pick up some top end speed while also losing the "V". Just make sure that your water intakes are still under water when on plane.
