this is a great way to do your ducks. feeds four light eaters or two hungry eaters. pre cook one cup of rice in two cups water, or 1/2 package angel hair pasta, set aside. in a large skillet put 1/4 cup olive oil,preheat, with the breasts of three/four ducks, slice thin about 3/16th" place in hot oil,brown lightly.add one medium yellow onion chopped, one clove garlic, or granulated garlic,one large can diced green chile's,1/8th cup of soy sauce, salt, pepper,cayenne pepper to taste,a dash of sweet basil,simmer for 20 minutes. add one can mixed vegtables or french cut green beans, stir them in. in a large bowl place hot precooked rice or pasta, then pour duck mix in and mix, let stand a couple of minutes covered. serve with a sourdough bagget.mallards pintails spoonies widgeon teal gadwall are some of the best ducks to use for this recipe.but goose will also work, but will be a little tough, compared to the tender duck.
