Got tons and I need some insight :smile:
I have had the butter/brown sugar acorn squash but thats about it

I have a recipe for baked butternut squash stuffed with sausage and apple and I bet it would be good for other varieties of squash as well. I've yet to try it, but maybe you've provided the inspiration.
Position a rack in the center of the oven, Preheat the oven to 375 degrees and lightly oil a baking dish large enough to hold the squash.
Halve the squash and remove seeds, etc. Brush w/vegetable oil, cover w/lid or aluminum foil and bake cut side up until almost tender. Keep the oven on.
Meanwhile, crumble and cook over medium heat until no longer pink:
1 cup well-seasoned fresh bulk sausage
Without draining off the fat, add:
1 large tart green apple, peeled, cored and cut into small cubes (I'm going to use a Pink Lady apple: yummy!)
Cook, stirring, for several minutes, just until crisp-tender. Remove from heat. When the squash is cooked, scoop out most of the flesh, leaving a thick shell. Lightly mix squash pulp into the sausage mixture, breaking up the squash as little as possible. Mix in:
2 T butter, softened
1 T packed dark brown sugar
1/4 t ground sage
Salt and ground black pepper to taste
Pile the stuffing into the squash halves. Dot with:
1 T butter, cut into small pieces
1 T packed dark brown sugar
Bake, uncovered, until piping hot and brown and crusty on top, 20 to 30 minutes. Let cool for several minutes before serving.
Now I'm going to stop by Richies and get me a squash!

<font color="orange">Orange-Glazed Grilled Acorn Squash </font>
4 acorn squash, halved lengthwise, seeds and membranes removed
1/4 cup melted butter
Salt and freshly ground pepper
4 cups fresh orange juice
1/2 cup light brown sugar
4 whole allspice berries
1 stick cinnamon
Preheat the oven to 350 degrees F.
Brush the cut side of each acorn squash with the butter and sprinkle with salt and pepper. Place squash, cut-side down, on a baking sheet and bake until almost tender, about 30 minutes.
While the squash is baking, combine the orange juice, brown sugar, allspice, and cinnamon in a medium saucepan. Cook over high heat until reduced to 1 cup, stirring often.
Preheat the grill to medium-high. Place the squash, cut side up, on the grill, and brush with the orange glaze. Cook for 5 minutes, turn over with tongs, and grill for 5 more minutes, or until tender and glaze is caramelized. Remove from the grill and brush with more of the glaze. Serve warm. :cheers:
