We like to BBQ salmon/steel head this way.

Mayo

Salt & Pepper

Stuff fish with Crab meat

Wrap fish in foil--so the crab meat will not fall out.

Cook until done--High heat for 10 min on each side.

Take fish out of foil and finish off to your liking.

This is a God send. Enjoy.

So after you take the crab stuff out do you suck the juice outta the head like crawdadas?

I simply take a sheet of foil, smear it with marg,add the fillet, lemon pepper, slices of orange, lemon lime, more lemon pepper close up tight poke a few holes and BBQ its easy and Vary good
