Baked Salmon with Lime, Jalapeno, Chives and Sour Cream
1 3/4 to l pound salmon fillet
1 Tbs. lime juice
1 1/2 tsp. butter, melted
salt and pepper to taste
SAUCE
1 1/2 tsp. butter
2 Jalapenos, seeded and chopped
1/3 cup sour cream
3/4 tsp. lime juice
salt and pepper to taste

Preheat oven to 500 degrees. Butter or Pam baking dish. Place Salmon in dish skin side down. Mix lime juice and butter. Brush
over Salmon. Sprinkle with salt and pepper. Let stand 15 min. Bake until fish is almost opaque, about 9 min. per inch.
Meanwhile, prepare sauce. Melt butter in heavy sauce pan over med.-low heat. Add Jalapenos and cook until tender, about 3
min. Add sour cream and stir until heated, Do Not Boil. Mix in lime juice. Transfer fish to platter and spoon sauce over. Sprinkle
generously with chives.
This recipe can be doubled or tripled, I always triple the sauce because my family likes it alot.
