Help: Need Sure Fire Salmon Recipie for Lil Chief


I have about 20lbs of springer id like to smoke before the weekend.

I have a lil chief all ready to go, anyone have a great recipie (I dont want to screw it up)? IE brine/soak time/wood chip kind

Or should I just follow the ones off the luhr jensen site??

Here is my zipperlip highly technical recipe:

1 part non iodized salt
2 parts brown sugar

Rub each piece of fish and set them in a bowl in fridge over night. Next day, smoke 3 pans of alder and cook until done, flesh side down.

Bingo.

Riverkeeper uses the exact recipe I use. Turns out great every time.

When you pull the fish out after brining make sure to rinse well, pat dry and then air dry for a few hours. You'll see a sheen appear.

I sometimes sprinkle on a little lemon pepper before I load the smoker.

Watch your smoker. With the warm days it will have a tendency to cook a little faster than normal.

There are lots of great recipes out there, but the basic is always good.

Here is a tip for you.

Spray PAM on the racks prior to use, and your cleanup efforts will be reduced by about 95%. Spray it on the catch tray at the bottom, too.

You clean up your smoker??!! That explains a lot. LOL.

5 Quarts water
3# brown sugar
1 onion chopped
12 OZ cure( we get ours in SE PDX. in a 50# box. But the stuff at Bi Mart should do)
1/2 cup Worchestershire
1/4 cup Yoshidas
1TBL SP. Crushed red pepper
3 Cloves garlic
1 Tbl Sp Garlick salt
1 Tbl Sp season salt
2-3 Tbl Sp Black pepper

Mix this up in a tub. Put the fish in it skin side up for 12-24 hrs in the fridge(this is another reason to have a bait fridge). take the fillets and place them on the racks. Pepper heavily( fish is hot Jerkey is sweet). Much heavier than you would a steak.
1 pan alder chips

Smoke til done and set in fridge for 4 -6 days( vac pac first). Do not eat it immediately.

This is enough brine to do about 2 springer/urb sized fish. Twin 30#ers will need more.

When you do eat it, try some pepperjack cheese and crackers with it. It tastes best when trolling the ocean. But at home is OK too.

Now that I am thinking about it, I am gonna eat a package right now.

I remove the skin before putting fish in my brine. Stays together just fine. I always use pam or something like it on the racks and pan. More alder smoke I can get on it the better.

This is a sure Fire recipe.
I call it my 3-2-1 brine.
3 parts brown sugar
2 parts white sugar
1 part non-iodized salt

mix and apply in layers w/fish.
leave in brine over night.
put fish on rack and air dry 2-4 hours.

mix with one quart water
soak fish in it from 4-12 hours

smoke till done.

Years of research have led me here:

~1.5 qts water
1 c. sea salt
1 c. brown sugar
1/4 c. soy sauce
1/4 c. white wine
1 tsp Johnny's seasoned salt

soak 8 hrs
rinse
dry on racks ~ 1 hr.

2 pans of chips alder & apple (more alder in the 1st, more apple in the next) 4,5,6 hours

Who said anything about the smoker?

Just the racks, man, just the racks.

I'd try your recipe, but that would mean I would have to catch and retain a fish!

What a novel concept!



PS - I didn't see any Eagle Claw in your recipe?

The Eagle Claws come before the smoker. But only with herring. Everything else gets "good" hooks. If ya fish "my" hooks in the ocean very often, you wont have time to clean off the racks between batches. Ya just "Out with the old, and in with the new" til Thursday nite. Then you tie on some fresh high quality leaders and head West for more feesh.

Here is how I do my smoked fish. I took a simple brine recipe and fine tuned it.

32oz bag brown sugar
3/4 cup canning salt
8 cups water

I always freeze my fish before smoking. It will soak in the brine better and make a better tasting fish.

Remove skin and all dark meat before placing into the brine. Helps eliminate any unpleasant fishy taste. If you have not tried it I hightly recommend trying it without skin. If there are any fish that smell bad or have freezer burn don't place it in the brine. I have ruined a batch by doing this.

I place into brine for a minimum of 18 hours. Give it a quick rinse after removing.

I have not done a full smoke in 2 years. Not since I started canning. With canning, bones are not an issue as they are desolved. They do not take up freezer space. I use half pint jars which are perfect for lunch or snack.

I put my fish in the smoker using 2 pan fulls of alder chip. Smoke a maximum of 2 hours. That is with a full Big cheif. Just enough to add flavor and not dry it out. I did a full smoke the first time I tried canning. Came out way to dry. I then place it into jars and into the pressure cooker for 110 minutes.

It is a lot of work but well worth the time. The taste is awsome. The best part is the natural smoke flavored juices in the jar. I smoked alot of Wind river springers this year. I use the same process for all my salmon and steelhead.

1 cup suger
2 cups soy sauce
1tsp garlic powder
1sp peper
1/2 tsp tabasco

PUt fish in pan.. pour over.. and brown suger till she looks good..

Soak over night. Put on racks let dry for 20 min or so.. sprinkle more peper over the top if you like..

smoke for 6-8 hours with 4 pans of smoke through it.. when the fish has about 45 min left get some honey and brown suger stir it up and then put it on the fish for a glasze YUM!!!!!!!!!!

add pinapple juice to the brine and spread coconut surup on the fish after brining and setting up for a couple hours before smoking. I have a complete recipe my Grandmother gave me, (the Queen of the Willy on the Jim Conway show). PM me and I will turn you on to it.
