Ceviche

Seafood cured in lime juice

1 lb raw scallops, squid, fish (todays favorite TUNA)
1/3 cup lime juice (the fresher the better)
1 large red or green sweet pepper (prefer roasted, peeled seeded & diced)
1/2 cup red sweet onion , coarsely chopped
1 Tbsp seeded , finely chipped green chilies
1/4 cup finely minced fresh cilantro
1 Tbsp olive oil (virgins only)
1/4 tsp salt
1/8 tsp fresh ground pepper
2 tsp Tequila (optional)

In a med bowl combine fish & lime juice - cover bowl and refrigerate 4 hours.
Remove fish from refrigerator and pour off lime juice.
Add the sweet pepper, onion, chilies and cilantro.
In a small bowl combine the oil, salt, pepper & tequila.
Pour liquid over the fish mixture.
Chill and serve with lime wedges.
I like to dip it with hearty tortilla chips.

Printed that one for my files! Thanks. Reminds me of spear fishing in Guam, taking the catch and soaking it in lime juice while hanging on the beach, adding soy sauce and gulping in down in about an hour with cold San Miguel beer.

Down South (where the little numbers are) they call this "Mexican Sushi"! Try some diced tomatoes in it too!

That looks great! I add tomatos and cucumber and leave out the cillantro and peppers. I like to pickle the onion (a lot of it - Walla Wallas) and cucumber in rice vinegar.

Hey Crit'r Git'r -- thanks for the recipe..... this is MRS Reef-Diver at the helm.... :nerd:

See ya soon, I'm going tuna fishing with you guys, looks like way too much fun. Especially with the looks of that ocean (from Reef Diver's post).
